Plant Power Challenge: Lemper Cake

Hello everyone!
Haven't entered a recipe in a long time in this community. It feels very empty, because I can't think what to cook, so every challenged at @plantpoweronhive becomes my reference to explore recipes and share them with all of you.
After 2 weeks, finally this challenge is back for all of us.

Especially now that challenged Plant Based Challenged is getting hotter and more challenging for us with each theme.

In this time, who initially read it, I thought a little, how to make savory cake, flans or pie without using animal products? Very challenging isn't it?
However, it will not make me give up, because in Indonesia there are so many cakes that can be made from plant based.

This time I used sticky rice and coconut as the main ingredients. This cake is usually served when there is a celebration such as social gathering, birthday, wirid, family events and wedding parties. Because this cake is very easy to cook and cheap. What is certain is this cake is very tasty and delicious. Has a high taste in every bite.

I will share the recipe for 'Lemper Cake'. If you are from Indonesia, surely you understand this cake very well, right?

Let's see the recipe and ingredients in making lemper cake.



Ingredients:

  • 250 grams of sticky rice
  • 60 ml thick coconut milk
  • 200 ml of water
  • 200 gr grated coconut
  • 4 cloves of red onion
  • 4 cloves garlic
  • Coriander
  • 3 red chilies
  • Kandis acid
  • Lemongrass
  • Bay leaf
  • lime leaves
  • Salt
  • Palm sugar
  • Banana leaf
  • Tooth pick

How to cook Lemper Cake:

  • Wash the sticky rice, then add 200 ml of water in 250 grams of sticky rice. Add a little salt and heat over medium heat.

  • When the water starts to dry, slowly add the coconut milk. Stir well.
    Then put the rice into the steamer. Steam for 15 minutes, then turn off the heat.

  • Puree red chili, onion and garlic. Add some coriander.

  • Saute ground spices until fragrant, add bay leaves, lime leaves, kandis acid and lemongrass. Add palm sugar slowly. Add a little salt.

  • Add grated coconut, roast with low heat. This takes a long time and is a bit tiring because you have to keep stirring it so it doesn't burn. Remove and cooling down.

  • Cut the banana leaves lengthwise. Then put the sticky rice in the middle of the serundeng. Wrap with banana leaves. Tie banana leaves on both sides like candy wrappers.

  • Grill over the fire or roast on a wok pan.

  • Lemper cake is ready to be served.

The way to make it is very easy, but it looks very complicated because it has to be plated on banana leaves and baked. Banana leaves add aroma to the lemper cake. However, when eaten and melted on the tongue will make us to stop chewing. Be careful for those on a diet, because this is very delicious.
