I love glass noodles. After seeing this I want to run to Chinatown and get stuff to make this but I have to go to work. It's going to be toast for me haha. Oh why did I look at this.
I'm making this on my day off for sure. No clay pot though. I have no space to store one more thing. I don't know if I can find the plum ingredient though.

So glad you like them and hope you do Carolyn, It’s surprisingly easy to pull together and especially fun to cook but no need for a clay pot, just a small Teflon pan or normal pot with the lid on would be fine for this recipe too.
You can skip the plum and rice vinegar as most Thais do and they'll serve these glass noodles with sour soy sauce(Jig Chow) instead, a kind of dipping sauce for dim sum.
