There are doughnut recipes with several steps, and I don't want to prepare them because they take too long, but today I share an easy recipe where the donuts are baked. Also, this recipe is ideal for kids who suffer from some kind of allergy (lactose, gluten, nuts), being a good alternative for their snacks.
- 1/2 cup rice flour
- 1/4 cup sugar
- 1/2 cup vegetable oil
- 1 tablespoon baking soda
- 3/4 cup vegetable milk (soy, almond, coconut)
- 1 tablespoon lemon juice
- 1 teaspoon vanilla essence (optional)
In a bowl place all the dry ingredients (flour, sugar, and baking soda) and add the soy milk with oil. Mix well and add the lemon juice. It is important because the acid from the lemon will react with the baking soda and make the donuts fluffy.
Pour the mixture into donut-shaped molds and bake for 30 minutes at 180ºC. If your molds of metal, you should add a few vegetable oils to prevent the donuts from sticking. If you use silicone molds, there is no need to use oil.
You can dip the donuts in melted chocolate. I use one that is gluten and lactose-free. It has a bitter taste which contrasts with the sweetness of the donuts. To make them more fun, you can put confetti on top.
As you can see, this is a mix and bake recipe. This recipe yields 12 medium donuts. If you want to make more, double the amount of ingredients, and that's it. I invite you to try this recipe at home and enjoy a delicious snack with a soft texture.
