Sweet potato gnocchi with eggplant

For people who profess the Catholic religion, Holy Week began this week, a period that has implications for food. During this week, meat should be avoided. The only animal products allowed are fish and seafood, cheese, and eggs. However, most Catholics prepare many meals based on fish.

Today I want to break from the routine of eating only fish, and I prepared a delicious vegetarian meal.

Italian cuisine is usually associated with sausages, meats, and pizzas. However, it is a cuisine that uses an infinity of vegetables that make our palate very happy.

Today I want to share a recipe with products straight from the earth to our table. Today I will show you how to prepare delicious sweet potato gnocchi with eggplant sauce.

Ingredients

For the dough:

3 medium units of sweet potato
6 tablespoons of wheat flour
Salt and nutmeg to taste

For the sauce:
1 medium onion, finely chopped
1/2 red bell pepper, chopped
2 ripe tomatoes, chopped
1 medium eggplant, chopped into strips
3 tablespoons vegetable oil
salt and pepper to taste

The gnocchi is prepared from mashed potatoes, but other starchy tubers can also be used. I want my food to have sweet, salty, and sour flavors, so I will use sweet potatoes to achieve that sweet touch.

Cook the sweet potatoes. When they are still warm, peel them and mash them with a potato masher or fork.

Add the flour, salt, and nutmeg. The nutmeg activates the taste of the sweet potato. It is a good trick. Knead until you get a uniform dough. Divide the dough into portions and form thin sticks. Cut small portions, and to give them their characteristic ribbing, you can run each gnocchi over the surface of the tines of a fork.

Try to make the gnocchi of uniform size to facilitate cooking

Making the sauce is very easy. Preheat the oil and sauté the onion and red pepper. Add the tomato, lower the heat and let it cook until the sauce makes.

Add the eggplants and season with salt and pepper to taste. Mix well and cook for 5 more minutes. Do not peel the eggplants as there is a lot of fiber in the peel that helps good intestinal health.

While preparing the sauce, bring a pot of water to boil. As soon as it starts boiling. Add the gnocchi and cook until they float. It only takes a couple of minutes. When the gnocchi float, remove them with a skimmer and serve.

It is a delicious, flavorful meal. When serving the gnocchi, you can add a drizzle of olive oil. This recipe makes 4 servings.
