Today I want to share with you the recipe of this delicious food that has its origins in the. Middle East but is very often seen here in the West since vegetarianism and veganism are gaining place.
In this opportunity I would like to clarify that this is a version that you probably gave from the original, and I would like that if you have another version, share it with me! I know there are many people from the Middle East in the community and it would be great to enrich me with their culinary knowledge! I've seen around that in the original version the chickpeas are not cooked, just soaked and then processed. Since we are not used to eating uncooked legumes here, I haven't tried it that way yet, but I assure you that they are delicious and when you make them you will want to have a reserve in the freezer.

The procedure is very simple and it is very versatile when it comes to cooking and preparing it. I invite you to watch the step by step!

Hoy quiero compartirles la receta de esta deliciosa comida que tiene su origen en el. Medio Oriente pero que se ve con mucha frecuencia aqui en Occidente desde que el vegetarianismo y veganismo vienen ganando lugar.
En esta oportunidad me gustaría aclarar que esta es una versión que probablemente diste de la original, y me gustaría que si tu tienes otra versión, me la compartas! Se que hay mucha gente de Medio Oriente en la comunidad y sería genial enriquecerme con sus conocimientos culinarios! He visto por ahí que en la versión original los garbanzos no se cocinan, simplemente se remojan y luego se procesan.
Como aquí no acostumbramos a comer legumbres sin cocción aún no me he animado a probarlo de esa manera, pero les aseguro que quedan deliciosos y que cuando las hagan querrán tener una reserva en el freezer.

El procedimiento es muy sencillo y es muy versátil a la hora de cocinarlo y prepararlo. Les invito a ver el paso a paso!

WHAT WILL YOU NEED? // QUE VAS A NECESITAR?

For 40 falafels// Para 40 falafels:

ENGESP
3 cups of dried chickpeas, soaked and cooked.
1 medium onion.
1 large green onion.
2 or 3 cloves of garlic.
A handful of cilantro.
2 teaspoons cumin.
2 teaspoons of salt.
100 ml lemon juice.
1 cup flour.
Bread crumbs, quantity needed.
3 tazas de garbanzos secos, remojados y cocinados.
1 cebolla mediana.
1 cebolla de verdeo grande.
2 o 3 dientes de ajo.
Un puñado de cilantro.
2 cditas de comino.
2 cdas de sal.
100ml de jugo de limón.
1 taza de harina.
Pan rallado, cantidad necesaria.

AND NOW WHAT? // Y AHORA QUE?

First you will need to chop all the vegetables. You can do it with a blade, I used a food processor and chopped all the vegetables together.

Then follow the cooked chickpeas. If you have a food processor or mixer it will be easier but it is not exclusive, you can crush the chickpeas with a fork or a potato masher.

Luego siguen los garbanzos ya cocidos. Si tienes procesadora o mixer será más fácil pero no es excluyente, puedes pisar los garbanzos con un tenedor o pisapasas.

Then place all the ingredients except the breadcrumbs in a bowl. With your hands integrate until a homogeneous and smooth but consistent dough is formed.

Luego coloca en un bowl todos los ingredientes excepto el pan rallado. Con tus manos integra hasta formar una masa homogénea y lisa pero consistente.

With your hands take portions of the dough and form small balls.

Once you have formed small balls with all the dough you should roll them in breadcrumbs.

Take them to a plate to place in the freezer.

✅ For me the best way is to wrap them in a fajita tortilla, or in Arabic bread, or in pita bread.... You can add vegetables, cheeses and sauces to your liking and make them different each time!//Para mí la mejor forma es envolviendolas en una tortilla de fajitas, o en pan árabe, o en pan pita.. Puedes agregarle vegetales, quesos y salsas a tu gusto y hacerlas diferente cada vez!.
✅ A plate with salad or rice is also an excellent option! //Al plato con ensalada o con arroz también es una excelente opción!
