The Brand New PLANT BASED challenge: Super Salads!

Hello, vegans, and food lovers greetings here is my post for the plant-based challenge super salad. today my salad is inspired by the american abstract expressionist painter, Paul Jackson Pollock

The ingredients:
Grains:
1/2 cup rice cooked with 1/2 cup split yellow lentils. and
1/2 cup finger millet, cooked.

1 cup of sprouted red lentils and mung beans.
1/4 fresh coconut.
20 soaked and peeled almonds
1/2 tsp pink salt and 1/2 tsp black pepper.
2 tbsp raisins, 2 tbsp pumpkin seeds
1/2 red paprika.
1 carrot
1/2 cucumber locally produced.
1 tomato
1/2 lime
a handful of young kale leaves
1/2 red onion
1/2 beetroot
1 tbsp maple syrup
a few rocket leaves. a few mustard leaves a few sprigs of parsley and a few chive flowers, all freshly picked from the garden.
1.5 tbsp olive oil.
1 tsp each ginger and turmeric spears.
3/4 cup of pomegranate kernels.
25 wild and 8 garden pansies
I discovered my avocado wasn't good after I cut it, so emitted them.

First, we go with the nutrient value of the ingredient.
Rice lentils and finger millet: rice contains thiamin and niacin which also help in boosting your metabolism. It is carb and starch we need to produce energy. and when the rice is cooked with yellow lentils it is very easy for digestion. And very good to combine with raw ingredients. It can offer weight loss benefits and be helpful for weight management plans. It is recommended to people suffering from digestive issues as it is light and healthy and suitable for babies.

The finger millet is little known in western countries but in South Asia, it is a wholesome nutritional staple. finger millet contains vitamin A, B, niacin, potassium, and iron, the best antioxidant. It regulates heart health and kidney function and controls the bad cholesterol good for diabetics because of its low glycemic index and good for the digestive system the insoluble dietary factors help to produce probiotics which help to protect good bacteria in the gut. as vegans do not eat dairy, finger millet is particularly beneficial, Millet is the powerhouse of a balanced diet for poor people.

The sprouts contain iron, zinc, calcium, potassium, magnesium, and Vit E, consuming a handful of sprouts of different beans together with raisins and soaked almonds in the early morning, is beneficial for the immune system and for weight loss, good for digestion. for muscle and tissue strength. Raw sprouts have more benefits than cooked but here i am using both.

Carrot and cucumber these vegetables are low in calories but high in nutrients, and the nutritional value of cucumber and carrot are good for our body Cucumbers have a high water content, as well as vitamins A and K, magnesium, potassium, and fiber.it relieves fatigue, improves skin complexion, and helps digestion. Carrots are an excellent source of beta-carotene (vitamin A), vitamin K, potassium, and fiber. which helps to regulate blood pressure and keeps your heart beating regularly.Natural booster for the immune system and helps to protect against infection.

Quercetin is a flavonoid antioxidant that’s highly concentrated in red onions
It is rich in anthocyanins, which are powerful plant pigments that may protect against heart disease, certain cancers, and diabetes.
Raisins are very healthy for vegans because of an insoluble dietary factor that produces probiotics that help to protect good bacteria in the intestine.
Almonds whether soaked or unsoaked, are rich in many nutrients and associated with improvements in heart health, blood sugar control, and weight.
But soaked almonds are easier to digest and contain less tannin.

Pumpkin seeds improve heart health, prostate health, and protect against certain cancers. they are packed with a substantial quantity of healthy fats, magnesium, and zinc.

Pomegranates are rich in antioxidant compounds that help protect your cells from free radical damage. full of antioxidants and anti-inflammatory compounds such as punicalagin. which is beneficial for heart, urinary, brain, digestive, and prostate health.

Coconut meat is high in healthy fat, and also contains MCTs, which are metabolized differently than other types of fat. The meat also provides carbs and protein along with many essential minerals, such as manganese, copper, iron, and selenium. polyphenol antioxidants in fresh meat help protect our cells.

Picking greens from the garden- kale, mustard, parsley, and rocket and chive flowers

the dressing is made with salt, pepper, lime juice, maple syrup, and olive oil. everybody knows the effectiveness of lime and olive oil for weight loss and detox. maple syrup is a healthier sweetener with antioxidants that help digestion and are anti-inflammatory.

the rice and split yellow lentils (dal) are washed and cooked together with a few crystals of rock salt. the 1/2 cup sprouts are steamed for 4-5 minutes in the steamer.
i started building the sald with 1 cup cooked dal-rice and the steamed sprouts .

and cooked finger millet. the salad is really taking form

And finish with raisins, shredded coconut, pumpkin seeds, turmeric and ginger spears, and lastly the pansies and mustard flowers. now it is looking like a jackson pollock original- abstract and expressive but still

we eat everything food, water, air, emotions, and information through the sensory organs through the motor organs. But a very important aspect is the food the diet which gives us energy, strength, clarity of mind, strong immunity, and sharpness of sense organs. But it depends upon what food we eat, how we eat when we eat, where we eat, and how much we eat. This I wrote in the eco train community a few weeks ago.
