Happy Monday Dear Friends,

I hope you had a lovely weekend and now you are ready for exciting week. It is less then month before Christmas therefore is time to start making some goodies.

I already made some and today I have the recipe and video ready for you. These ALMOND TRUFFLES are super easy to make and they absolutely delicious and guilt free! I hope you will like them, especially if you are chocolate and nut lover like me and my daughter.

ALMOND TRUFFLES RECIPE
Almond Truffles with soft filling and chocolate shell are pure delight for your taste buds and you don’t any special skills to make them.

Equipment
• silicon mold, piping bag, food processor, toothpicks, double boiler.
Materials
ALMOND FILLING
• 1 ½ cup of almond flour
• 1/3 cup maple syrup
• ¼ cup of water
• ¼ cup of vegan butter room temperature
• SHELL
• 120 gr dark chocolate recommend 75%
• 1 cup of sliced almonds

Instructions

  1. In a bowl, mix 1 cup of almond flour with maple syrup and water.
  2. Add vegan butter and mix until smooth.
  3. Gradually add the remaining almond flour while mixing until smooth.
  4. Fill your silicone mold using piping bag with large tip.
  5. Place into freezer for 2 – 3 hours.
  6. When ready, remove two halves from the tray and combine by pressing around the edges with your fingers and rolling in your palms.
  7. Insert back into mold with the edge side up and pierce with toothpicks.
  8. Place back into freezer for 30min.
  9. SHELL
  10. Grind the almonds in the food processor and transfer to a bowl.
  11. Melt the chocolate above the steam in double boiler.
  12. While holding on to toothpick, dip the truffle into chocolate and quickly transfer to a bowl with almonds.
  13. By using a spoon, cover all the sides thoroughly and set aside on a tray line with parchment paper. Repeat until all truffles are done.
  14. Carefully pull out the toothpick and drizzle with the remaining chocolate by using coffee spoon.
  15. Place into refrigerator for 1 hour.
