A Vegan Journey: Yummy Fritters and Rice with Leeks

I didn't always eat meals this amazing. Growing up my family either ate meals from a box, meat and potatoes, or fast food. This formed a habit that stayed with me into my 30's. I found myself more than 100 pounds overweight, dealing with sleep apnea, and all around miserable. I decided to make changes and started to take care of my body. It took persistence and time to get to where I am today, experiencing the best health I've ever had. I'm still not perfect and strive every day to improve.

Fortunately, I attracted an amazing partner who has a beautiful gift. She cooks intuitively and the recipe she prepared today was scrumptious! We typically fast intermittently and eat 1 or 2 meals. This helps to really pour the love into what we eat. I asked for this meal again because it tastes so good. She agreed and started pulling out the ingredients. Not everything was on hand so I had to run to the market.


Parsley, Garlic, Dill, and Onion


Carrot, Potatoes, Corn, Nutritional Yeast, Leek, Salt, Pepper, Cayenne Pepper, Olive Oil, Paprika, Cumin, Rice


Shredded Zucchini

This one gets a little messy and she did put a limit on how often she's willing to prepare this meal. Yet, it is always done with love and gratitude for the food as well as the soil, sun, and water that helped it grow.


Here you see the mixture for the fritters, and the leeks, onions, and garlic to add to the rice. All that's left to do at this point is to make the patties and cook the rice. I started to salivate as I was taking this photo. Still an hour to wait for dinner at this point.


I kept hovering around the kitchen and snapped this before they went in the oven.

The final product did not disappoint!

The flavors explode in your mouth with each bite. Thank you, Love, for this wonderful meal!
