Purple Cabbage Salad with Avocado Dressing

Salad is always a quick dish to enjoy, without any cooking involved. Fresh salads made from various vegetables are delicious when served with your favorite dressing.



Unlike regular salads, this salad is made from purple cabbage, which is very rare in my area. I found it at the market yesterday and had to buy it. I really like the color of this cabbage; it looks very appealing in any dish. This time, I combined purple cabbage with bean sprouts as the fresh vegetables, but for the salad dressing, I planned to use avocado as a delicious alternative.

This isn't the first time I've enjoyed purple cabbage salad, but this one is very different in my opinion. Using avocado as a dressing is certainly not something I do often. I have made guacamole at home before, so I don't think it will surprise my taste buds because I have enjoyed it before. The avocado sauce I made is simple; I just combined avocado with chili and fried garlic to make it more savory. I think this dressing will go well with the vegetables I combined.




Ingredients

50 grams purple cabbage
20 grams bean sprouts
100 grams avocado flesh
2 cloves garlic
½ teaspoon salt
3 cayenne peppers




Making Procedure


Add salt to the purple cabbage, then mix in the bean sprouts, stir both together, and let sit for 10 minutes.

While waiting for the vegetables, I prepare fried garlic until golden brown.

Then add it to the avocado, mix at medium speed using a little water.

Once the sauce is ready to serve, add it to the vegetables that I have arranged on a serving plate. You can add fried onions on top.

I serve the salad on a serving plate with a generous sprinkling of avocado sauce. To make the salad even more delicious, I also add celery leaves on top as a sweetener and chopped red chili peppers. Everything is ready to enjoy.

I really like the thick sauce mixed with fresh purple cabbage, and the slight saltiness is just right because I don't add any more salt to the sauce. So everything tastes just right. Then, when you stir it, the natural sweet and savory flavors of the vegetables blend together perfectly. It's great for breakfast or lunch, or even to accompany your dinner. For protein, you can enjoy grilled tempeh or tofu.
