Stir-fried beans / red pepper and cheese flavor (vegan) 🧀🌶️

I love using beans in my everyday cooking as it is so simple, quick but tasty - probably the main things that we are looking for when scrolling through recipes 😁

My family grows these white beans or snap beans, but you can cook any beans that you have on hand, for example, green ones. 🌱

This is a super simple recipe but it is so tasty! And since the autumn and cooler weather is already here (at least in my country), I just crave more of that comforting food.

I basically always flavor the beans with red pepper spices and nutritional yeast - that's what gives it a little more taste and creates a cheesy flavor.

You will need:
For one portion

  • 280 g. white or green beans
  • 3 cloves of garlic
  • 1 onion
  • 1.5 teaspoons of ground red pepper seasoning
  • 3 teaspoons of nutritional yeast
  • ¼ teaspoon of salt
  • 1 tablespoon of oil for frying
  • About 1.5 liters of water for boiling the beans

Preparation

  1. Pour about 1,5 liter of water to a pot and begin boiling it while you continue with the next steps.
  2. Wash the beans, cut off their ends and if the beans are very long, cut them in half.
  3. Put the beans in boiling water and cook for about 20 minutes. The water should cover all the beans.
  4. Peel and cut the garlic and onion into small pieces. Put aside.
  5. Once the beans are boiled (you can test them by taking one out and it should be soft), pour about a tablespoon of oil to the pan and heat it.
  6. Put the chopped garlic an onion to the heated pan and cook until they turn yellow and soft, mixing occasionally.
  7. Put the boiled beans (after draining the water) into the pan with the fried onion and garlic and fry for 3-4 minutes, mixing occasionally.
  8. Then add ground pepper spices, nutritional yeast and salt to the beans in the pan, mix well and serve. You can also sprinkle some fresh dill or parsley on top.

As always, you can add any other spices or veggies that you like!
