Vegan banana bread with cherries (no sugar) πŸ’πŸŒ

Banana bread is one of the greatest inventions in my opinion πŸ˜‚

I baked this one without sugar and it still was sweet and also refreshing because of the cherries. It is amazing how only bananas can give you that much sweetness. πŸ™ˆ

Now, if you don't have gardens of cherries in your yard, you can use frozen cherries in this recipe and it should be just as tasty. πŸ₯§

Usually banana bread is made just from bananas, flour, milk and some other spices but why not upgrade it with some other berries, especially since it's summer and it is much easier to get different ones. πŸ“

So in this recipe I suggest to add some fresh cherries to get that nice sour taste which is perfect for summer when very sweet dessert are not a priority and you want something more fresh. β˜€οΈ

For this recipe I used 12x22cm wide and 6cm deep baking tray.

You will need:

  • 3 ripe bananas (the more ripe they are the better)
  • 100 ml. plant-based milk (I used soy)
  • 40 ml. coconut oil
  • 200 g. wheat flour
  • 20 g. coconut flour (if you don't have it, you can use wheat instead)
  • 1.5 teaspoons of baking powder
  • 1 tablespoon of apple cider vinegar
  • 200 gr. fresh pitted cherries
  • A pinch of salt
  • 0.5 teaspoon of cinnamon
  • A pinch of brown sugar (optional)

Preparation:

  1. Start by preparing the cherries. Remove the cherry pits from each cherry. You can do that with a special device but if you don't have it, I used just a plain wooden skewer. Just take a cherry between your fingers and push the pit out with the wooden skewer.

    If you have bigger cherries you can also use a straw or the tips from the icing decoration tool

  2. Preheat the oven to 180 degrees Celsius.

  3. Peel the bananas and mash them well with a fork.

    Mix them with milk, coconut oil and vinegar.

  4. Mix flour, baking powder, cinnamon and salt in a separate bowl.

  5. Mix the flour mixture with the mashed banana mixture.

  6. Add pitted cherries to the mixture but set aside about 2 tablespoons of cherries to be placed on top of the cake.

    Mix the cherries into the mixture.

  7. Grease the baking tray with coconut oil.

    Pour the batter into the pan and spread it evenly.

  8. Place the rest of the cherries evenly on top of the cake and press them down a little with your hands.

  9. Sprinkle the entire cake with a pinch of brown sugar (not necessary).

  10. Bake in the oven for about 40 minutes.

    Let it cool once you take it out of the oven.

After that, just enjoy your cake!
You can also add other berries to the cake such as blueberries, raspberries or whatever you have!

This cake is very interesting, as you have mixed two fruits that complement each other perfectly: The sweetness of the banana and the acidity of the cherries, no doubt they combine very well.

I think it's great that you develop the step by step in such a nice and structured way, as this helps those who don't know basic cooking techniques, to be able to replicate your recipe.

Yours looks great! My mom makes probably the best vegan banana\zucchini\berry bread I've ever had for me-she uses pineapple instead of apple sauce\eggs and it's great!... I'm sure she probably puts more sugar in it than I would ever use, probably
