OUTDOOR COOKING OF OGBONO SOUP WITH CHICKEN USING A COAL POT

Cooking is fun when there are more hands to do different things at the same time. Though, I don't fancy when the actual cooking is going on and more than one person have to put this and that in the pot. I like it when one person is assigned to do the cooking but the washing, slicing, cutting, pounding etc can be done together as a group especially when it is cooking for a large amount of people.

Today, we shall be preparing Ogbono soup and chicken. Ogbono soup is a popular soup in Nigeria, it is often referred to as draw soup. Draw Soups are the kinds of soups that are slimy in texture and other types include okra soup, ewedu soup (jute). Ogbono soup is made with Ogbono Seeds (wild African bush mango seeds) and other ingredients.

Firstly, we'd boil the chicken and set aside. We cut the chicken into desired sizes and washed thoroughly in clean water. The chicken is placed in a pot.

Then, the pot is placed on medium heat and we added onions, curry, thyme, ginger, garlic, seasoning cubes, salt to taste and some water.

Then, the chicken and the ingredients are mixed together and then boiled till tender. Different people have their own preferences on how soft they want their chicken to be, so the choice is yours to put off the heat when you think it's soft enough. However, you must be sure it is well cooked before turning off the heat. So, you can either grill or fry your chicken and set aside.

Next, we'd start the preparations of the ogbono soup

INGREDIENTS

  • Grounded ogbono
  • Chicken stock
  • Stock fish
  • Stock cubes
  • Red pepper
  • Grounded crayfish
  • Ugu leaves
  • Palm oil
  • Salt to taste

HOW TO PREPARE

  • Wash your ugu leaves thoroughly and slice into small sizes

  • Rinse and cook the stockfish for about 5 minutes, or till its soft enough for you.

  • Add some chicken stock to a pot and place on medium heat, add the blended ogbono to the pot, stir and allow to dissolve in the stock.

  • Add the palm oil and crayfish. Allow to cook for about 5 to 7 minutes on medium heat.

  • Check the salt from stock if it is enough, if not add more salt and seasonings if need be.

  • Add your already fried chicken to the pot and allow to simmer for some minutes
  • Now, add your sliced ugu leaves and leave to cook on a very low heat for about 2 minutes.
  • Your delicious ogbono soup is ready.

NB: I could not get the final picture of the soup. I was busy preparing the swallow that will be used to eat the ogbono soup. I prepared semovita. Ogbono soup can be eaten alongside pounded yam, eba, amala, wheat, etc.
