Saludos a todos por esta comunidad de Hive Cross Culture!. Hoy he decidido publicar por aquí una bebida venezolana, que se consume especialmente en Navidad y que a mí, en lo particular, me gusta mucho, y quiero ofrecerles algo de su historia.

Esta bebida fue creada por Eliodoro González Poleo, químico y perfumista venezolano; quien formó una sociedad con Alberto Prevost, y abrieron en 1892 “El Café del Comercio”, en Caracas; no obstante, la sociedad que habían establecido duró escasamente 12 meses. Eliodoro González, tuvo la fortuna de ganar la Lotería de Madrid, con lo cual tuvo los recursos suficientes para cambiar el nombre al lugar, mejorarlo, ampliarlo y mantenerlo en funcionamiento. Lo bautizó “El Botiquín del Comercio”. Este negocio creció, y ofrecía atención y comida de calidad, tenía música en vivo, (a cargo de un pianista), la cocina era dirigida por un chef francés; y la atención la ofrecían mesoneras uniformadas. Estamos hablando de Caracas de principios del Siglo XX, la cual no era una ciudad sino un pueblo prácticamente rural; así que este establecimiento comercial era todo un boom, una novedad. Paralelamente, Eliodoro González P., abrió su empresa “Licorería Central” y fue en este contexto que nació el Ponche Crema, bebida a base de leche, huevos, azúcar y licor que tiene 14º GL. Para esa época se consideraba una bebida exquisita, que servían en el mencionado botiquín; y aún lo sigue siendo, ya que luego de casi 121 años, se mantiene la misma receta inalterada, la cual es el secreto industrial mejor guardado de Venezuela. Ahora bien, yo les traigo mi versión personal y rápida de esta exquisitez, y si bien no logra el mismo sabor del original, sí se aproxima y se disfruta mucho su sabor.

Greetings to everyone for this Hive Cross Culture community! Today I have decided to publish here a Venezuelan drink, which is consumed especially at Christmas and that I, in particular, like a lot, and I want to offer you something of its history.

This drink was created by Eliodoro González Poleo, a Venezuelan chemist and perfumer; who formed a partnership with Alberto Prevost, and in 1892 they opened “El Café del Comercio”, in Caracas; however, the partnership they had established lasted barely 12 months. Eliodoro González, was fortunate to win the Madrid Lottery, with which he had sufficient resources to change the name of the place, improve it, expand it and keep it in operation. He christened it "El Botiquín del Comercio". This business grew and offered quality food and attention, it had live music (by a pianist), the kitchen was directed by a French chef; and the attention was offered by uniformed waitresses. We are talking about Caracas at the beginning of the 20th century, which was not a city but a practically rural town; So this commercial establishment was a boom, a novelty. At the same time, Eliodoro González P., opened his company “Licorería Central” and it was in this context that Ponche Crema was born, a drink based on milk, eggs, sugar and liquor that has 14º GL. At that time it was considered an exquisite drink, which was served in the aforementioned medicine cabinet; And it still is, since after almost 121 years, the same recipe remains unchanged, which is the best kept industrial secret in Venezuela. Now, I bring you my personal and fast version of this delicacy, and although it does not achieve the same flavor of the original, it does come close and its flavor is very enjoyed.

LA RECETA / THE RECIPE


Ingredientes y equipo:

Para preparar aproximadamente 2.5 litros de Ponche Crema Venezolano, se requieren los siguientes ingredientes y equipo:
  • 2 litros de leche de vaca, ya sea recién ordeñada (pero ya esterilizada), preparada en polvo o pasteurizada (no recomiendo esta última opción).

  • 400-500 ml de licor de su preferencia, preferiblemente ron o brandy.

  • 1 lata de leche condensada.

  • 200 gr de flan o pudín de vainilla.

  • 1 cucharadita de vainilla o, como yo hice, una semilla de sarrapia conocida también como tonka.

  • Botellas de vidrio esterilizadas (para embotellar).

  • Una olla, un colador, un batidor manual, licuadora.

Ingredients and equipment:

To prepare approximately 2.5 liters of Venezuelan Cream Ponche, the following ingredients and equipment are required:
  • 2 liters of cow's milk, either freshly milked (but already sterilized), prepared in powder or pasteurized (I do not recommend the latter option).

  • 400-500 ml of liquor of your choice, preferably rum or brandy.

  • 1 can of condensed milk.

  • 200 gr of flan or vanilla pudding.

  • 1 teaspoon of vanilla or, as I did, a sarrapia seed also known as tonka.

  • Sterilized glass bottles (for bottling).

  • A pot, a strainer, a hand mixer, a blender.


EL PROCEDIMIENTO / THE PROCESS


Para esta bebida no recomiendo emplear leche pasteurizada, ya que es muy diluida. Pueden utilizar leche en polvo para la cual tendrán que preparar los 2 litros de leche de acuerdo a las indicaciones de la misma; también pueden utilizar leche de vaca recién ordeñada, que es la que yo empleo, pero deben esterilizarla antes (por razones de higiene), y extraerle el contenido graso, ya que al dejárselo le resta palatabilidad a la bebida. La forma de esterilizar y extraer la grasa de la leche de ordeño, la pueden ver en una publicación que hice días atrás:
Procedo a servir un litro de leche en una olla, le introduzco la semilla de sarrapia o tonka y la llevo a fuego alto. Al hervir la leche, disminuyo la llama, y dejo que la semilla de sarrapia infusiones por 5 minutos. La procedo a extraer con un colador. Cabe señalar que esta semilla se enjuaga con agua limpia, se seca y se puede guardar en la nevera para ser reutilizada posteriormente, ya que conserva su aroma y sabor.

For this drink I do not recommend using pasteurized milk, since it is very diluted. They can use powdered milk for which they will have to prepare the 2 liters of milk according to its indications; They can also use freshly milked cow's milk, which is the one I use, but they must sterilize it before (for hygiene reasons), and extract the fat content, since leaving it reduces the palatability of the drink. The way to sterilize and extract the fat from the milking milk can be seen in a publication I made days ago:

I proceed to serve a liter of milk in a pot, I introduce the sarrapia or tonka seed and bring it to high heat. By boiling the milk, I lower the flame, and let the sarrapia seed infuse for 5 minutes. I proceed to extract it with a strainer. It should be noted that this seed is rinsed with clean water, dried and can be stored in the fridge to be reused later, as it preserves its aroma and flavor.

Posteriormente, adiciono poco a poco el flan o pudín a la leche caliente, y comienzo a remover constantemente mientras cocino a fuego medio por 5-6 minutos más. Apago la llama y dejo que esta mezcla adquiera temperatura ambiente.

Later, I add the flan or pudding little by little to the hot milk, and I start to stir constantly while I cook over medium heat for 5-6 more minutes. I turn off the flame and let this mixture come to room temperature.

Cuando la mezcla de pudín o flan se haya enfriado, procedo a vaciarla en el vaso de la licuadora para mezclarla con un poco más de leche. Posteriormente le añado la leche condensada, el licor y el resto de la leche, y licúo por aproximadamente por 2-3 minutos. Cabe señalar que el tipo y cantidad de licor, dependerá del gusto de cada quien. En mi caso utilicé un ron de calidad, pero también he elaborado esta bebida con cocuy y con caña clara. La proporción de licor es de 200 ml por litro de mezcla, no obstante puede incrementarse o disminuirse.

When the pudding or custard mixture has cooled, I proceed to empty it into the blender glass to mix it with a little more milk. Later I add the condensed milk, the liquor and the rest of the milk, and blend for approximately 2-3 minutes. It should be noted that the type and amount of liquor will depend on the taste of each person. In my case, I used a quality rum, but I have also made this drink with cocuy and light cane. The proportion of liquor is 200 ml per liter of mixture, however it can be increased or decreased.

Procedo a embotellar la mezcla y a enfriarla. Esta bebida se puede conservar en la nevera por meses, bueno, como me gusta tanto lo máximo que la he conservado es por 2 meses, pero considero que si las botellas han sido bien esterilizadas, puede durar un año refrigerada. Se sirve bien fría sola o con cubitos de hielo. ¡Que la disfruten!

I proceed to bottle the mixture and cool it. This drink can be kept in the fridge for months, well, as I like it so much, the maximum I have kept it is for 2 months, but I consider that if the bottles have been well sterilized, it can last a year refrigerated. It is served chilled on its own or with ice cubes. Enjoy it!

Interesante la historia que nos compartes de esta bebida tradicional, y por supuesto, también la receta. Así como no es necesario que sea diciembre para degustar una rica hallaca, tampoco lo es con un buen ponche crema.

Y respecto a la historia, considero que deberíamos conocer las anécdotas y orígenes de toda nuestra gastronomía, pues esto nos haría valorarla aún más. Mi buena amiga @sirenahippie, me has dado la oportunidad de recordar que en mi época de juventud, hice ponche crema en una ocasión y usé leche en polvo. En ese tiempo me gustaba pero, solo un poquito, nunca fui amante del licor y ahora no tomo ni de poquito desde hace más de 30 años. Pero crédito a quien lo merece.
