The Benefits of Random Cooking Skills during Lockdown || Cassava and Chicken Fried All Over || # DashOutSunday

In the past, or even now, whenever I see something delicious being sold by some restaurant, I always think to myself: hmm, can I make this myself? Why so expensive if the process is this simple? The answer is of course that you pay for the convenience of not having to go through that cooking process yourself. BUT, if you choose to it yourself, the biggest benefit is that you save quit some money along the way.

It seems there is another benefit as well. And that is that the more times you make a certain dish, the better you get at it. This is a logical result, and one that comes in handy during things like lockdowns where most can't go out to buy their junk-food "delicacies". Well, that wasn't a problem for us this Sunday, as we went to JFC instead of KFC. The first one stands for Joel's Fried Chicken. xD

First thing I had to do was get me some chicken and marinate those bad boys. Forget to take pictures in between but after adding some salt, pepper powder, plenty of fresh finely chopped garlic, fresh lemon juice, it was almost ready to go. I put in some thyme pesto I had made from my own garden. along with flour, an egg and more flour.

Into the hot oil they went then, giving us the perfect fried color that is needed.

Even junk food has to be a bit balanced in nutrition, so we had to decide on a side dish. Luckily we had some cassava donated by Tanja's parents. Straight from their garden to be exact. Chef @tanjakolader did her ancestors proud and cooked and fried those cassavas like no one ever did before. The secret is to fry them twice. Once just a little bit and then the second time until golden brown. This way they get crispy without sucking up oil.

We had a wonderful lunch, and everyone involved was sleepy after. So I'd say that was a successful attempt. Sure, anything can fry some chicken, but the fact that practice has made perfect means a helpful skill to count on whenever these conveniences aren't available.

I make a mean curry chicken! But lost would say it’s tasteless 🤷🏾‍♂️ But I guess my taste buds just strong.

Cassava and potatoes over rice. xD More so because rice causes illogical weight gain for me.

As long as the curry is HOT with peppers, it should taste great.

How can you go wrong with anything fried? I also like to make pakoras from the cassava leaves, another delicious fried food.

I was just looking into using the younger leaves as well this weekend. But I read something about them being poisonous? How do you use/prepare them?

Sounds like a legitimate theory to me. I have yet to try fried insects, but those will probably be good as well. xD
