KNOW THE BENEFITS OF WHAT WE ARE EATING: AMPALAYA CON CARNE WITH TOKWA

Yesterday was Sunday, my daughter went to a Christian church to attend mass services and when she came home, she had brought these bittermelons, as I saw these, I was planning to cook ampalaya con Carne with tofu; my version of cooking. I am so much in love with eating fried tofu.

We should know first the health benefits that we can get from the primary ingredients of the dish which I am going to cook.

BITTERMELON/AMPALAYA:

☆It has properties like insulin that acts to lower the body's blood sugar.
☆Rich in Vitamin C important micronutrients involved in disease prevention in boosting our immune system.
☆High in Vitamin A a fat-soluble Vitamin that promotes skin health and proper vision.
☆It has powerful antioxidant compounds that can help protect body cells against damage.

TOFU

☆ Is made from soybean, it is naturally gluten-free and low calories it contains no cholesterol and an excellent source of iron and calcium.

☆ The best substitute for eating meat, it has a good source of protein; minerals like iron, calcium, manganese, and phosphorus. A good diet for vegetarians.

Now we knew already the health benefits of what I am cooking today.

I would like to share with you, how I cooked my own version of Ampalaya con Carne I used pork meat, not beef.

Ingredients:
1/4 kilo of pork sirloin sliced into pieces.
4 cubes of tofu sliced and fried
2 pieces of medium bittermelon/ampalaya
1 piece onion chopped
4 cloves of garlic
3 tablespoon cooking oil
Ginger ( optional)
3/4 cup water.

Marinade ingredients:
2 tablespoon oyster sauce
3 tablespoon soy sauce
1 1/2 teaspoon sesame oil
2 teaspoon cornstarch
2 cloves garlic minced
1/2 teaspoon ground black pepper.

Instruction:
☆ Combine pork, ground pepper, soy sauce, sesame oil, and oyster sauce mix well add cornstarch and then mix. Marinate for 10 minutes.

☆ Heat oil in a cooking pan and fry the tofu and set aside.

In the same pan stir-fry the marinated pork for 3 minutes, set aside.

☆ In the same pan, Saute the ginger and garlic in remaining oil from the used pan add the onion, and continue to cook until translucent.

☆ Add the sliced bittermelon into the pan cook for 2 minutes.

☆ After 2 minutes add the stir-fried pork and fried tofu or tokwa back into the pan, add water,

cover the pan and let it boil for 5 minutes. Transfer to a serving bowl and serve.
