Living in the city is so exhausting, and all we need is a fresh air from the province to recharge our body and mind. So here we go!
After a week of work we decided to go home in our province, since we were unable to go this past week because of typhoon Paeng. I hope everyone is safe wherever you are in the Philippines.
So now let's get to it, our short yet energizing trip to the province.
The best thing if you live in the province is that food is just in your yard, ready to be picked. The fresher the food the tastier. And there we go seems like I'm now focusing on the food that we cooked, and I apologize for that. I'm just so happy, that I want to share it to all of you.
My father have a lot of chicken in his yard, if you want to eat some then you have to catch it. I wish I captured the video on how we caught the chicken, but anyway we caught one.
One skill that I learned growing up is preparing chicken from catching to cocking it. So after catching it, I started cooking it, and yes I used firewood to cook it. For me it's far more tastier using fire wood than gas stove or soaking it in hot water.
After removing all the feathers, now I have to toast it until it's natural oil come out, this makes the soup more flavorful.
After I toasted the chicken, I saw my son who just woke up, so I showed him the chicken, he's looking at it curiously. I'm so glad I was able to show it to him. Time will come I'll teach him how to do it, I want him to be a kid that can do things by himself.
After toasting the chicken, I went out to look for some vegetable to add to the chicken, by the way I'll cock it "Tinola". And thank God typhoon Paeng spared the papaya tree.
So now I think I now have all the ingredients for the Tinola like Chicken, Papaya, Onion, Garlic and Ginger that I just pulled from my father's yard.
Time to chop those Ingredients. Now everything's ready time to cook it.
I started frying the garlic and Onion and I used the fats that I collected from the chicken. Then I added the meat, added a little salt, then I let it fry for a while for the meat to absorb all the ingredients I put. Finally I added the Papaya and Ginger, I just kept the fire going until its cooked. And Taaada it's done.
One secret that we Igorots use to make any food tasty, and this spice should always be present whenever we eat. Let me Introduce you to "Sili "
I swear It makes any food tastier, specially with Bagoong and Calamansi.
Now its time to eat, My son is ready to dig in.

Wow! you had a great time in the province @suteru. I missed my father who used to have chickens too in the province. Now that he's gone no more native chicken at home because my mother don't want to raise chicken because sometimes she is discouraged when some of the neighbors will get it.
I can see it that you are enjoying the moment in your province @suteru ..Anyways, ang daming sili naman niyan. Hehe.
