Roast on the cross - Asado a la cruz

To celebrate the birthday of my daughter's partner, we were invited to the fifth that her family owns in the town of Pilar. A beautiful spring day that of course helped make the day perfect.

For being the most experienced of the attendees (read old) I received the honors of roasting the rib of beef that my son-in-law's brother bought for the occasion, 9 and ½ kilograms of excellent meat, all in a huge, solid and thick set of bones and meat. Therefore, very early I started by lighting the fire in a solid and well-built circular device that Lucas bought some time ago for these tasks of roasting meat.

While the fire took strength and heat and the ribs placed on the iron cross were ready to spend several hours there, I began to think a little about how this typical food of my country had received the ingenious contribution of people to cook it in different ways. That cross, of course, was one of them and it is not usual to use it because you need some expertise, space and a lot of firewood, things not too easy to get fundamentally in the "concrete jungle" as we colloquially call our Federal Capital.

As is known, livestock, together with agriculture, are two of the strongest sectors of our economy and the consumption of beef is one of the highest in the world, or at least it was until not long ago when the successive economic crises to the that we are used to, continue to make life difficult in these parts. Despite these crises, the different cuts of beef and of course the "roast" are common among us and this is a distinctive feature of our native cuisine.

It is particularly rare to name a cut of meat because of the way it is cooked; In reality, what we call “roast” is the ribs of the cow and it is usually cut into more or less fine strips to cook it on embers generally made with charcoal. This time it was not cut in any way, a whole flank of the beef was there in a single piece, it is the way it is cooked with the cross.

When the industrialization and international commercialization of beef cuts began in the world, large quantities of beef were exported from here, but the cuts were among the most appreciated pieces in the culinary sense: loin, peceto, hindquarters, but all properly boned; the bones and the rest of the beef were thrown away because nobody wanted them. Until in some of the first local refrigerators, employees began to cut into strips those ribs with little meat that went to the garbage and took them home to eat them with their families. This is how the cut we call "roast" was born.

Then different ways of cooking it arose and the most used is an iron grill and where coals of coal or firewood are placed underneath. But not everyone has a grill, not even charcoal so many have managed to do it in other ways. The gauchos, for example, make a well in the ground, place the meat and then cover it with a plate and put fire on it, that more than a barbecue is like an oven, I never ate it that way but those who do say it They made it come out exquisite, a different taste but very tasty. There are pinches that cross each other and with the meat skewered on their lancets, it is firmly embedded in the ground and a fire is placed nearby, so I once did a barbecue at the Arrayanes river campsite, in Patagonia. It was my first experience and it turned out very well, well at least that's how my friends who accompanied me on that occasion said. It is a similar form to this of the cross that is nothing more than a couple of pieces of iron welded together forming a cross and the meat is tied at the top and bottom of it and then nailed to the floor to place fire nearby. The one that I used yesterday and that can be seen in the photograph is a bit more sophisticated and has a regulation of various positions to bring the fire closer to or further away.

Anyway, there are many ways to do it and this is a very particular one and not much used, luckily it turned out very well and everyone was happy and hungry, of course I got the usual "applause for the griller".

Para festejar el cumpleaños de la pareja de mi hija fuimos invitados a la quinta que su familia posee en la localidad de Pilar. Un hermoso día de primavera que ayudó por supuesto a que la jornada fuera perfecta.

Por ser el más experimentado de los asistentes (léase viejo) me tocaron los honores de asar el costillar de novillo que el hermano de mi yerno compró para la ocasión, 9 y ½ kilogramos de excelente carne, todo en un enorme, sólido y grueso conjunto de huesos y carne. por lo tanto bien temprano comencé por encender el fuego en un sólido y bien construido dispositivo circular que Lucas compró hace ya un tiempo para estos menesteres de asar carne.

Mientras el fuego tomaba fuerzas y calor y el costillar colocado en la cruz de hierro ya estaba dispuesto para pasar allí varias horas, comencé a pensar un poco en cómo esta comida típica de mi país había recibido el aporte ingenioso de las personas para cocerlo de diferentes maneras. Esa cruz por supuesto era una de ellas y no es habitual utilizarla porque se necesita cierta pericia, espacio y mucha leña, cosas no demasiado fáciles de conseguir fundamentalmente en la “jungla de cemento” como llamamos coloquialmente a nuestra Capital Federal.

Como se sabe la ganadería junto a la agricultura son dos de los sectores más fuertes de nuestra economía y el consumo de carne vacuna es uno de los más altos del mundo, o al menos lo era hasta no hace mucho donde las sucesivas crisis económicas a las que ya estamos acostumbrados continúan haciendo difícil la vida por estos lares. No obstante esas crisis, los diferentes cortes vacunos y por supuesto el “asado” son habituales entre nosotros y ello es un rasgo distintivo de nuestra cocina autóctona.

Es particularmente raro denominar un corte de carne por la forma en que se lo cocina; en realidad lo que nosotros llamamos “asado” es el costillar de la vaca y se lo suele cortar en tiras más o menos finas para cocerlo en brasas hechas generalmente con carbón. En esta ocasión no fue cortado de ninguna forma, todo un flanco de la res estaba allí en un solo trozo, es la forma en que se cocina con la cruz.

Cuando en el mundo comenzó la industrialización y comercialización internacional de cortes vacunos, desde aquí se exportaban grandes cantidad de carne de res, pero los cortes era de los trozos más apreciados culinariamente hablando: lomo, peceto, cuartos traseros, pero todo debidamente deshuesado; los huesos y el resto de la res se tiraba porque nadie los quería. Hasta que en algunos de los primeros frigoríficos locales, los empleados comenzaron a cortar en tiras esos costillares con poca carne que iban a la basura y se los llevaban a sus casas para comerlos junto a sus familias. Así nació el corte al que denominamos “asado”.

Luego surgieron diferentes formas de cocinarlo y la más utilizada es una parrilla de hierro y donde debajo se colocan brasas de carbón o leña. Pero no todos tienen una parrilla, tampoco carbón así que muchos se las han ingeniado para hacerlo de otras formas. Los gauchos por ejemplo hacen un pozo en la tierra, colocan la carne y luego la tapan con una chapa y le colocan fuego encima, eso más que un asado es como un horno, yo jamás lo comí de esa forma pero dicen los que sí lo hicieron que sale exquisito, un gusto diferente pero muy sabroso. Hay pinches que se cruzan y con la carne ensartada en sus lancetas se clava firmemente en la tierra y se coloca fuego cerca, así hice un asado en una oportunidad en el camping del río Arrayanes, en la Patagonia. Fue mi primera experiencia y salió muy bien, bien al menos así dijeron mis amigos que me acompañaban en esa oportunidad. Es una forma similar a esta de la cruz que no es otra cosa que un par de trozos de hierro soldados formando una cruz y la carne se ata en la parte superior e inferior de la misma y luego se clava al piso para colocar fuego cerca. La que yo utilicé ayer y que se puede observar en la fotografía es un poco más sofisticada y tiene una regulación de varias posiciones para acercar o alejar del fuego.

Como sea, hay muchas formas de hacerlo y esta es una bastante particular y no demasiado utilizada, por suerte quedó muy bien y todos estuvieron contentos y hambrientos, por supuesto me llevé el consabido “un aplauso para el asador”.
