My grandmother used mayo and my mother used butter. I have to say that I prefer the butter, although the mayo tastes good. The bread makes a huge difference too. Different slices of bread call for one or the other. The mayo supports a heavier, rustic bread, in my opinion.

As an aside, I butter my bread like you do the mayo, I don't put it in the pan and let the bread fry. Our techniques are a little different, but, I think you get a better connection to the sandwich. :)

So you must heat the butter then? Or do you use a butter-ish spread? I just never thought to do it like that. I bet it uses less butter your way.

Butter it lightly. I use real butter. It uses less butter because you need to only put enough on there so it won't stick to the pan. FYI, it will not turn golden brown where there is no butter.

If you put a thick layer of butter, the sandwich will be saturated.

Oh man I likey Grilled Cheese!!!

My partner makes such kinds of sandwiches for me, he uses cheese and mayo but I never saw how he does that. But it tastes so good...Sometimes he put dry meat too...
