Canning Sauerkraut (Recipe) & Back To Law School!

I’m sitting this morning in the quiet of my dining room eating a bowl of chili thinking how much Covid has changed our lives. I lost my livelihood, my decades old business and today I go back to law school. It’s scary to start anew at 43, but here I am. We are the only ones who have the power to open doors to our future and this is one of the many steps I’m taking.

I’ve been spending this year organizing and expanding my walk in pantry. This week I not only dehydrated about 50 trays but I canned so much good stuff including fermenting a few jars of spiced cabbage (knock-off kimchi)...

& water bath canning 10 jars of our favorite and easy sauerkraut!

Making sauerkraut is easy and a great thing to have on hand if your cabbage harvest has been plentiful!
All you need to do is chop up your cabbage as fine or as thick as you prefer and rinse it. Let it drain as best as you can in a colander.

Into your sanitized canning jars, using a canning funnel, loosely pack your cabbage 3/4 of the way!

Into each 16 oz jar I put a teaspoon of white granulated sugar, a teaspoon of canning or kosher salt, and a teaspoon of white vinegar.

Then I top off my jar with boiling water up to where the cabbage fills the jar. Remember to leave 1/4 space!
Using a chopstick I poke around my cabbage to get any air bubbles out and with a clean paper towel with a little bit of white vinegar I clean off the lip of my jar screwing on the lid and placing it completely submerged in my hot water bath pot for 20 minutes.
Remove from the hot water bath and let cool completely checking to see if the lid has sealed.
Let the sauerkraut ferment a minimum of four weeks in your pantry then enjoy!
Easy right?
Aside from all the kitchen shenanigans and school I also cleaned off my garden to start our fall vegetable garden and added more Easter Egg layers from Backyard Chickies who I highly recommend if you’re in Southern California!
