We have a ton of cucumbers and even more zucchini right now which is a blessing but also adds to my kitchen chores. We love cucumbers but as we all know this yummy veggie is nothing very good frozen or dehydrated unless you make them into salt and vinegar cucumber chips which I will share the recipe with you soon! I decided to make a couple of jars of pickles to stock my pantry up with and also share.
These are tangy and super crunchy and easy to make and you’ll see by using the juice of one orange you get a fresh citrusy sweetness too!
Ingredients
2 cucumbers
1 teaspoon peppercorns
Juice of 1 orange
2 tablespoon dried hot pepper flakes
1 tablespoon kosher salt
1 tablespoon minced garlic
White vinegar
Water
Directions
- Wash and cut up your cucumber into spears, rounds or whatever shape you prefer, add to your glass jar.
- Add all your seasonings including the orange juice.
- Fill your jar 2/3 of the way with vinegar and top it off with cold water.
- Put the lid on, place in your refrigerator and wait at least 2 weeks.
This will be the tangiest, crunchiest jar of pickles you’ve ever had I promise!
I’m off now to dehydrate a couple of pounds of zucchini and then to watch my daughter’s @anyavp ‘s first 3speak video on her blog! I’m excited because it’s my favorite recipe that she makes, broccoli cheddar soup! Certainly would be nice to have a big bowl right now!
