The important part is to place the finished macarons in an airtight container for 24 hours. This will allow them to "bloom".

I don't know why these little sandwich cookies are so appealing, perhaps it's the sweetness, or is it the bite size nature of them?

The modern iteration of these macarons came about in the 1930s where they are served in their sandwich form.
