This is a female great green bush-cricket (Tettigonia viridissima), grote groene sabelsprinkhaan in Dutch, the largest grasshopper in The Netherlands at about 6cm (2.4") in length.

They are still active now, but it is almost the end of the season for them.
They mainly eat other insects they catch with their front paws, but this one seems to be very possessive of flowers:
