Soba Noodles With Tilapia Fish

Hey folks ! I am back again with my college budget meal.

As someone who is currently scrapping by, it can be quite a challenge to eat healthier and nutritious meal. You want to go out and eat out at fancy restaurant but the budget doesn't agree with you. So, what can you do? well, from the last three years or so, I learned to be creative with my ingredients. That way, it is never difficult for me to make a healthy cheap and fancy meal for me. Here I am sharing one of my secret fancy meal recipe just for you.

Soba Noodles With Tilapia Fish

Yield: 3 SERVINGS Prep time: 15 MINUTES Cook time: 30 MINUTES Total time: 45 MINUTES

Today , I am going to share my most recent culinary experiment using Soba Noodles. What is Soba Noodles? it is a variant of noodle that is made of buckwheat flour. The texture is smaller and softer which make it a perfect ingredient for soup based meal.

Fun fact : in japan, soba noodles has its own tradition too, generally people eat soba noodle during the new years eve. Also, if you are an avid fan of anime, you can find anime character slurping this delicious soba.

Without further adieu, let's get into the cooking part !

Ingredients

  • A packet of Soba Noodles
  • A packet of champignon mushroom
  • Tilapia fillet
  • Grated, a fresh small cucumber
  • Grated, a fresh small carrot
  • Egg tofu (optional)

Soup broth

  • 1 1/2 tablespoon soy sauce
  • Mushroom / fish broth (vegan/pescatarian friendly)
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp oregano
  • 1 tsp ginger

Garnish

  • Seaweed flakes
  • Chili flakes
  • Anchovies

DIRECTIONS:

Cooking Soba Noodles

  • Wash all the necessary ingredients and chop the mushroom finely.
  • Boil water in a pot, cook soba noodles around 5 minutes, don't cook it for too long.
  • Rinse under cold water and drain it.

Cooking Tilapia fish

  • Boil water in a large pot, place the fish inside the pot.
  • Wait until it boils down and the water starts to get oily.
  • turn off the stove and set aside the fish.

Cooking the broth

  • Boil water in a large pot, add mushroom broth powder or you can simply replace the water with fish broth.
  • Add the soy sauce, salt and sugar.
  • Put anchovies and mushroom and a bit of tilapia fish.
  • Wait until it boils.

How to serve for aesthetic purpose

  • First, put a bowl serve the soba noodle
  • Second, Add grated carrot and cucumber.
  • Third, Add three slices of egg tofu.
  • Fourth, Add some Tilapia fish fillet
  • Fifth, Garnish with seaweed flakes, chili flakes and oregano

Serving The Easy Way

  • Simply mix all the ingredients and put soba noodles inside the large pot containing the soup broth.
  • Garnish with seaweed flakes, chili flakes

But but Mac, I don't have stove in my dorm. I can't cook this. Well, the truth is, I cook all of this with electric kettle and multi purpose rice cooker. So, there's no excuse for you not to make this delicious, nutritious and filling soba noodles with tilapia fish ! Also, for this 3-4 serving, I spent roughly 4$
