How to prepare Argentinean ‘Pastelitos Criollos’ with quince cheese!

Hello Steemians, how are you? Today we are going to learn how to prepare a typical dessert of Argentine tradition that are traditionally served on the 25 of May (when we celebrate the May Revolution of 1810 that marked the beginning of the Argentine War of Independence).

This dessert, named “Pastelitos Criollos” (a rough translation would be ‘creole small cakes’), uses a puff pastry and quince cheese (also you mean use sweet potato jam instead) as its core ingredients.

As with the Pascualina Tart you may either elaborate your own puff pastry for the Pastelitos Criollos or buy the premade puff pastry and elaborate the rest of the recipe.

Puff Pastry (for the Pastelitos Criollos caps)

You will need:

500 grams General Purpose Flour100 grams cold butter
Lemon JuiceSalt

Put the flour in a bowl, a teaspoonful of salt and cold butter in small pieces. Add two tablespoons of lemon juice and 300 cm3 of cold water. Mix with a wooden spoon joining it together. Put on a clean table and stretch it with a rolling pin. Fold it in three sections, stretch again and repeat the process six times. Set it aside for one hour and then stretch it. Cut in rectangles of about 10 cm (4 inches) per side.

Pastelitos Criollos


You will need:

24 special caps for pastelitos criollos300 grams quince cheese
Sunflower oilPowdered sugar

Elaboration

On a flat surface powder some flour and then assemble the pastelitos one by one putting over one cap a quince cheese cube in the center.

Cover with another cap, moistering the edges with a bit of water to allow both caps to glue together. Both caps should form a star when put together.

Twist the corners with your fingers, giving the pastelitos its characteristically shape.

Fry the pastelitos on both sides on a pan using well heated sunflower oil, they acquire a golden tone when ready.

Put some powder sugar on them and serve!

I've had quince cheese before (yummy) but never inside anything- just with crackers and cheese. These look great! Are they very sweet?

Hi @opheliafu! Yes, the pastelitos criollos are ver sweet due to the quince cheese and you need to wait a bit before eating them after frying (because else they are superhot). The alternative sweet potato jam version of the pastelitos criollos is not as sweet and some people prefer those.
