A group of scientists from the Massachusetts Institute of Technology (MIT) have developed a treatment on a micro and nanoscopic scale that accelerates the boiling process of water with the consequent energy savings, it is a treatment applicable to any surface and to all kind of industrial processes.

The secret of the new surface treatment is to add textures at several different size scales, the first being a very dense array of short, hollow 200-micrometer pillars, themselves coated with a rough nanometer-scale texture that at 500 nanometers It looks like a tapestry of twisted fibers.

Apparently, if in a boiling liquid we have many bubbles on the surface, that means that the boiling is very efficient, but when too many bubbles form on the surface, they can merge into one, forming a vapor film on the boiling surface, which affects to the efficiency of heat transfer.
Según parece, si en un líquido hirviendo tenemos muchas burbujas en la superficie eso quiere decir que la ebullición es muy eficiente pero, cuando se forman demasiadas burbujas en la superficie pueden fusionarse en una, formando una película de vapor sobre la superficie hirviendo lo que afecta a la eficiencia de la transferencia de calor.
To avoid this fusion of bubbles, the aforementioned textures are key to controlling the flow of bubbles, the micro-cavities help to separate them and cause bubbles to only form at certain points along the pillars but not over the entire surface, avoiding the formation of the vapor film and increasing efficiency.

I think it's a liquid method only for foods that may not be cooked well.
is that sorta like microwave? or it just heats up more rapidly?
It seems these textures make the liquids boil with less temperature.
