HOW TO MAKE VEGAN BURRITO

Few days ago I posted this blog about the foods I eat as a vegan. Unfortunately, I don't have a step by step photos of procedure in making most of the dishes. Maybe once I get the time to make those dishes again, I'll definitely document it so can share it here on HIVE.

Luckily, I was able to find the photos of how I made the Vegan Burrito. Here's the ingredients:

1 can baked beans
1 can pieces and stem of button mushrooms
5 cloves garlic, minced
1 red onion, sliced
1 large white onion, sliced
1 small cucumber, sliced
5 ripe tomatoes, sliced in strips
1 avocado (optional), sliced
3 cups cooked quinoa (or rice)
10 pieces wheat flour tortilla (corn or flour is also fine)

Here's how you make it.

If you want your burrito to be totally homemade, you can make your own tortilla. In my case, I'd prefer a store bought whole wheat tortilla.

Traditionally, burrito is stuffed with java or Mexican fried rice. But for me, I'd like to use a healthier option which is quinoa.

For the baked beans and mushrooms, just sauté the red onions, garlic, mushrooms until it's sides have some browning then add the can of baked beans and let it simmer for a bit.

I used Japanese cucumbers for this burrito. Japanese cucumbers are thinner, almost green in color and the seeds are smaller and softer than the local ones. If you can't find Japanese cucumbers you can use local just peel and and remove the seeds or depends on your preference.😉

If avocado is not in season you can put more vegetables or if you like sweet, a few slices of mango would be great. For the caramelized onions its basically sautéd onions until it becomes translucent and bit brown.

Once you put all the ingredients, you need to wrap the burrito. I wasn't able to take photos of how to wrap it but its easy peasy.
When you are facing the burrito, fold to the center the left and right sides of the tortilla. Then, hold the bottom part of the folded sides and start rolling the tortilla to the upper part of the surface. You can also wrap it in aluminum foil.
