Gluten Free Waffles- Recipe

How about some delicious fluffy waffles to celebrate this Sunday with? They are simple and healthy filled with protein and nutrition! 😍

We are on the road to Venice at the moment, the first destination on our trip to Spain!

Recipe:πŸ‘‡

  • 1 cup rolled oats,
  • 1/4 cup tigernut flour/almond flour,
  • 1/4 cup buckwheat,
  • 1 1/2 cup coconut milk,
  • 2 tbsp coconut blossom sugar;
  • 1 tsp baking powder,
  • 1 tsp apple vinegar,
  • 1 tsp gingerbread spices,
  • 1 ripe mashed banana,
  • 1 tbsp lupin flour/protein powder
    Method: blend the rolled oats and buckwheat until you have a fine flour, add all the dry ingredients in a bowl and mix, add the wet ingredients and mix quick. Heat the waffle iron and bake the waffles as usual.

Waffles are always best. Given the nasty weather outside they are really the miracle cure for any upcoming grumpiness. Thank you for the lovely recipe. Off I go...MUST BAKE WAFFLES.... ;)
