Eating Japanese Knotweed: Itadori

My favorite season has come! I love eating wild plants very much. I currently live in the mountains, so there are many wild plant spots near my house. I used to eat butterbur because my grandmother made meals with it a lot. Eating mountain food is very precious to me.

Japanese knotweed, or Itadori, is a very tough spring plant. It grows very quickly and becomes very tall and strong. As you may know, the name Itadori is familiar to manga fans. Yes, Yuji Itadori from Jujutsu Kaisen has the same name as this plant.

Additionally, if you have ever watched the Ghibli movie 'The Boy and The Heron,' the old handyman who often smokes talks about Itadori cigarettes. There is a historical record of Itadori being smoked as a cigarette, which is very interesting. I knew that we could make Itadori tea, but I didn't know about cigarettes.

Preparing Itadori for cooking requires some preparation, but the process itself is a precious moment for me.

Japanese knotweed, or Itadori, looks very healthy and delicious in the field next to the road. The stems look like they are at the perfect stage to eat. If they grow much more, they will become too tough to eat, and the leaves will bloom too much. I recommend eating them at this stage. I chopped around 10 Itadori stems this time.

After picking Itadori, cut away the leaves and top parts, and peel the skins. This part takes time, but it's a fun process, so I listen to music or podcasts.

After peeling the skins, boil water in a big pot. Just before it starts to boil, stop heating and pour the water onto the Itadori. The colour of the Itadori will change from deep green to light green, and the texture will become softer.

The top one is the fresh Itadori stem just after peeling the skins. The bottom one is just after pouring hot water.

After pouring hot water, soak the Itadori in cold water. Put them in the fridge overnight. Don't forget to change the water occasionally until you cook them.

Japanese Knotweed (Itadori) Bacon and Enoki Mushroom Stir-Fry

Ingredients:

Prepared Japanese Knotweed (Itadori), about 10 stems
Bacon, 2-3 slices
Some enoki mushrooms
Sesame oil, 2-3 teaspoons
Shichimi Togarashi pepper, 1-2 teaspoons
Mirin (rice cooking wine), 2-3 tablespoons
Soy sauce, 2-3 tablespoons
Sugar, 2 tablespoons
Salt to taste

Instructions

1, Take out the prepared Itadori from the fridge and drain the water.
2, Cut the Itadori into edible sizes.
3, Heat a frying pan and pour sesame oil into it.
4, Cook the bacon, enoki mushrooms, and Itadori.
5, Add salt.
6, Pour in all the seasonings and cook well.

Done! It looks delicious. The cooking time is about 20 minutes, including the preparation time. Preparing the Itadori takes overnight, but once it's ready, cooking is pretty simple and easy.

I didn't have fried tofu this time, but if you find some fried tofu, that would be perfect with this.

It was very good with rice, miso soup, and other dishes. It's good to put it into your bento box for lunch as well.

イタドリを食べる

好きな季節が到来しました!私は山菜を食べるのが大好きです。今は山に住んでいるので、家の周りにはいろいろと山菜がはえています。昔、祖母が作ってくれたふきの煮物を食べるのが大好きでした。山のご馳走を食べるのはとてもありがたいことです。

イタドリはとても元気な春の植物です。すばやく成長して背丈が相当高くなります。ご存知の通りイタドリといえば呪術廻戦の虎杖悠仁が思い浮かびますね。

さらに、ジブリの映画「君たちはどう生きるか」に登場する爺やがイタドリのタバコを吸うシーンが出てきました。イタドリをタバコにして吸っていたという記録があるそうです、面白いですね。イタドリ茶は知っていましたが、タバコにしていたのは知りませんでした。

イタドリの下処理は多少時間がかかりますが、その時間も楽しい時間です。

イタドリはとても健康的で美味しい植物で、たいてい道端に生えています。写真の中のイタドリの茎は食べるのにちょうどいい頃合いです。これ以上育ってしまうと茎の部分が硬くなってしまう上に、葉っぱが育ち過ぎてしまいます。ちょうどこのくらいの時期にとって食べるのがいちばん美味しいと思います。今回は10本くらいとってきました。

イタドリを収穫して、先の部分と葉っぱは取り除き皮をむきます。この下処理には時間がかかりますが楽しい時間でもありますので、音楽やポッドキャストを聴きながらします。

皮を剥き終わったら、大きな鍋にお湯を沸かします。沸騰する直前でお湯を止めて、イタドリの上から回しかける。イタドリの色が深緑から若草色に変化します。

お湯をかけた後、イタドリを冷水につける。冷蔵庫に入れて一晩置く。料理に使用するまで水を取り替えながら保存する。

イタドリ、ベーコンとエノキ炒め

材料:

下処理済みのイタドリ 約10本
ベーコン 2−3枚
エノキ 少々
ごま油 大さじ2−3
七味唐辛子 小さじ1−2
みりん 大さじ2−3
しょうゆ 大さじ2−3
さとう 大さじ2
塩 少々

作り方

1、冷蔵庫から下処理済みのイタドリを出して、水をきる。
2、イタドリを食べやすいサイズに切る。
3、フライパンを温めてごま油をひく。
4、ベーコン、エノキとイタドリを炒める。
5、塩を加える。
6、調味料を全て加えてよく炒める。

できあがり!調理時間は準備時間も含めて約20分。イタドリの下処理は一晩ねかせますが、準びが整ったら、調理自体はシンプルで簡単です。

今回は油揚げがないのですが、ここに油揚げを加えるとさらに美味しくなります。

ご飯と味噌汁と他のおかずと相性が抜群です。お昼のお弁当のおかずに入れてもいいですよね〜。
