Monday's supper - pork in cider

Fancied something simple and tasty for supper tonight so went with pork in cider. A simple one pot meal (rice was from a pouch).

I planned on using pork chops but the wife picked up pork medallions. They worked equally well and there was less fat to pour off.

I grabbed a casserole and browned the medallions in olive oil, removed then trained most of the fat.

Chopped carrots, onion, leeks, courgette, apple and mushrooms were added and softened for a short while. Then I added a clove of garlic, seasoned with salt and pepper and added around a tablespoon of tomato puree. I've not added it before but it worked well. Then it was in with a glass of cider and cooked off the alcohol. The pork was added back to the pot then topped up with water and crumbled a vegetable stock cube.

Once boiling on the hob I whacked a lid on it and shoved it in the oven at 170 (conventional oven) for just over an hour. Served with brown rice.

Delicious and a perfect winter warmer. Saying that, it'll double the amount of cider next time.
