Baileys Bread Pudding

Hi Lovelies!

I planned to replant my front yard flowers into pots, but I woke up to a very cloudy and rather chilly morning. Darn it. We are thinking to have some work done with the front yard, like raising the levelness (is this even a word 🀣), to avoid flood after Winter and whatnot. Yep. Owning a house means always worrying, always fixing, always trying to avoid this and that, while always killing your bank account in the process 🀣 I really don't know which one is better, renting from a landlord, or renting from the bank for 25 years πŸ˜… Our last landlord was so bad. She would charge us 2 mo in advance, whenever it was time for her to visit her home country. Yes, in other words, tenants paid her travels. This would be just fine if only she wouldn't take out the whole 2 mo rental at once, leaving tenants wiyh negatives in their banks πŸ˜… Inconsiderate is the word. So I guess renting from the bank is better? But the property tax always goes up annually, like it's choking us big time. So nothing really 🀣 We should all be just nomad! No wait, renting from hotel sounds better, there's pool, there's housekeeping, and oh! Breakfast includes! See, better 😁

I have what's way better for now tho! Boozy bread pudding 😍🀣😍🀣 Yes, it is for the adults in the house πŸ˜†

1 bag of bread slices
4 eggs
2 tbsp coconut sugar
1/2 tbsp vanilla essence
1 1/2 c Baileys Irish Cream
1 1/2 c milk
Raisins as needed
Semi sweet choc chips as needed
Unsalted butter as needed

Butter your 9 inch round Pyrex, set aside
Cube your bread, place some into the Pyrex, sprinkle with raisins and choc chips, tops with more bread cubes, sprinkle with raisins and choc, repeat until all bread cubes used up.

In a bowl, mix eggs and coconut sugar, using balloon whisk
Pour in 1 c of Baileys, 1 c of milk, and vanilla essence whisk to combine
Pour 1/2 c of Baileys into the 1 c measuring cup, then add in another 1/2 c of milk, making a mixture of 1 c, pour into the bowl, and whisk again

Pour liquid into Pyrex, cover with lid, chill in the fridge overnight
Bake the following morning at 350 F for 45 mins (without preheating the oven first)

Let stand for 10 mins, slice and enjoy!
