Fluffernutter Cookies (Big Size)

Good Morning!

Still from smokey northern BC. Yesterday we had 121 active fires, today it went up to 133 ☹️ Crazy sad. This was expected due to our rather mild Winter. We only had like less than 2 weeks of cold snap between from October to last month. So yeah, previous years embers were still burning under the soil 😬

I have a nice cookie recipe to share. My oldest loves it. We got a tun of Marshmallow Fluff and it has Fluffernutter sandwich recipe. He wanted that, but I made him Fluffernutter Cookies instead 😁 These cookies are as big as a palm btw, well my palm at least 😉

And before I share the recipe, I may have said low heat for mixer mixing in the vlog, when I meant low power 🤣

1 c flour
1/2 tsp BP
1/2 tsp BSoda
1 tsp cornstarch
A generous pinch of salt
1/2 c coconut sugar
1/3 c sugar
1/2 c unsalted butter
2 heaping tbsp smooth peanut butter
1 egg
1 tbsp vanilla essence
1/2 - 3/4 c mini choc chips
Marshmallow fluff as needed

Mix dry ingredients in a bowl, set aside

Mix sugars in another bowl, set to side

Cream butter and peanut butter until completely combined, then beat in sugars thoroughly

Crack in an egg and add in vanilla essence, beat until combined

Set power to low, beat in dry ingredients a little at a time to combine

Fold in mini chips

Scoop a dough, place on nonstick pan, top with 1 tbsp of fluff, then top it again with another scoop of dough

Bake on preheated 350F for 8-10 mins, let stand on pan 5 mins, then move cookies onto cooling rack

Let cookies cool completely before enjoying 😍
