Picadillo (Ground Beef with Cumin)

Good Morning!

BEAUTIFUL outside. I went out to my backyard half H ago to check on the new raised bed that my husband and I made yesterday, and 1 plant was dug out! Either by our cat or who knows 🤔 I fixed it, phew. So by 7 am was gardening already 😁

My oldest loves rhubarb pie. However, rhubarb is VERY expensive at markets. So I planted one back in 2012/2013. We were renting back then. Wherever we moved, we would move it with us. Planted it, dug it out, planted it, dug it out, over and over again. Noe that we have our own property, when we moved in, for sure said rhubarb moved in with us. Sadly, it never wanted to grow big whatsoever, for the past 3 years. So we never harvested any. Yesterday we bought 2 new plants, built raised bed garden, and planted all 3 (yep dug out the original and replanted it). Here is crossing fingers these 3 would get along nicely and can be harvested 2 years from now ☺️

I am baking bread pudding atm, but what am gonna share right now, is something else. Picadillo inspired 😍 Mexican dish of ground beef 😍

500 g ground beef
1/2 of a large onion
2 garlic
2 bay leaves
3 tsp cumin
3 tsp crushed parsley
2 large carrots
5 baby potatoes
1 can condensed tomato soup
2 cans water
Chicken bouillon powder
1 tsp garlic

Slice onion and garlic, set aside
Slice carrots and cube or dice potatoes, set to side
Brown beef then stir in sliced garlic and onion, cook for a minute

Stir in bay leaves and cumin, cook til fragrant, then add in potatoes and carrots
Pour in soup and water, stir
Add in parsley, stir

Season with garlic powder and bouillon powder
Cover pan with lid, cook until veggies tender on low medium heat
Serve with rice. YUMMO!
