Goof Morning!

Yep. No typo there. GooF morning. I sent an email to a school principal one time, with a typo. Instead Good, I typed GOOF. Me! Em ee me! I typed GOOF πŸ˜…πŸ˜…πŸ˜…πŸ˜… and it was an important email. My son was bullied and choked by a student from higher class, and I mistyped good. My gosh, I am a goof πŸ™„

It's a better morning, at the moment. Still cloudy but at least not windy and it's +7 C. In the news tho, the government already hired 2500 extra firemen as we are looking for worse Summer than last year ☹️ Really not looking forward to Summer now.

We planned to go to Europe this Summer break, however seems like it's gonna have to wait.

Anyhoo!

I have a great cookie recipe to share today. My TGIF Cookies. Whenever I make these, always great raves from whoever I share them, and totally kids and teens approved 😊

1 c flour
2/3 c cocoa powder
1 1/2 Tbsp BP
A super generous pinch of salt

1 c walnut bits
1/3 c cream cheese chips
1/4 c raisins
1/3 c mini semi sweet choc chips
1/3 c dark choc chips (70%)
1/3 c toffee bits
1/3 c semi sweet choc chips

1 scant c semi sweet choc chips
1/3 c dark choc chips (70%)
3/4 c unsalted butter
1 tsp vanilla essence

1 scant c sugar
1/3 c coconut sugar
3 eggs

Mix dry ingredients in a bowl, set to side
Mix add-ons in another bowl, set to side
Mix butter and both choc chips in a bowl, microwave for 50 secs, stir to combine well, then stir in vanilla essence

Beat eggs and both sugars until light and fluffy, then beat in butter mixture to combine well
Fold in dry ingredients a little at a time, just until combined, then fold in add-ons.

Drop per 2 scoops on parchment lined pan, give room between dough

Bake at preheated 325F for 15-18 mins

Cool on pan for 1 min then move to cooling rack
