Just Honey: carrot cake with lemon mascarpone cream

JUST HONEY
I am beginning a series of homemade sweet treats that exclude the use of sugar. I am only using honey to sweeten these as I started since the beginning of this year to cut off sugar from my diet. It is cheaper to use normal sugar instead of honey but I believe that for our health it is better to choose healthier alternatives.

Ingredients for the base sponge cake:

300 grams of grated carrots

50 grams of grinded walnuts

130 ml sunflower oil

200 grams of honey

3 eggs

50 ml of sour cream (30%fat)

250 grams of white flour

2 teaspoons of cinnamon

½ teaspoon of grinded nutmeg

1 teaspoon of salt

1 teaspoon of baking soda

Bourbon Vanilla extract

Ingredients for the mascarpone cream

2 lemons (the juice and the grated zest)

100 grams of honey

1 gram of curcuma

500 grams of mascarpone

Ingredients for the chocolate glaze

4 tablets of dark chocolate (I used Heidi 85%)

1 tablespoon of sour cream (30% fat)

1 tablespoon of honey

50 grams of grinded walnuts and whole walnuts for decoration

We begin by heating the oven at 180 degrees Celsius without ventilation.

The process for making the mix for the sponge cake is hilariously simple: you put in a bowl all of the ingredients in the order I have written them and you mix them. That’s it! You prepare the baking forms and pour the mix. You will bake them for 45-50 minutes. This sponge cake is very moist and it does not need extra syrup when you will assemble the cake.

After you baked them leave them to cool down and cut them in layers, I used a bread cutting knife for this.

In the meanwhile we prepare the mascarpone cream. We use the zest from the two lemons and the juice and we mix those with the mascarpone cream. We add honey and curcuma for enhaced yellow colour. You place the cream on the fridge while the cake is baking or cools down.

For the chocolate glaze I have put a bowl on top of a kettle with hot water. This mix is semi-liquid and I poured it into a plastic bag that I cut at a corner in order to decorate the cake.

You decorate the layers with cream and and the end you sprinkle walnuts and decorate with chocolate.

This is so delicious and the best part is that it contains natural ingredients.

I totally relate to your decision to use sugar alternatives:) I guess it depends a bit from country to country what you have available, but Agave-Sirup can be cheaper/similar to Honey, do you use that sometimes?

I have tried date syrup and sometimes, quite rarely, I enjoy the maple syrup. I have not tried the Agave yet

Yes, honey is full of vitamins, unlike plain white sugar which is like poison for our body.

I love it! I've tried making carrot cake with cane honey, and it's turned out darker than expected but delicious. Yours looks perfect. The shape is fun and pretty 😍
