Peruvian Seafood Rice | Recipe

Today we are going to be making a tasty rice with seafood, this is a recipe that has many variations and ways to prepare, but today I want to show you one that I learned here in Peru, this is a homemade recipe because in restaurants it is a little different .

Hoy vamos a estar elaborando un sabroso arroz con mariscos, esta es una receta que tiene muchas variaciones y formas de preparar, pero hoy quiero enseñarles una que aprendí aquí en Perú, esta es una receta de forma casera porque en los restaurantes es un poco diferente.

Ingredients:

  • Seafood mix
  • 250g fresh prawns
  • 2 cups of rice
  • 1 tablespoon of yellow chili paste
  • 1 tablespoon of panca chili paste
  • 2 onions
  • 1 tomato
  • 1 can of evaporated milk
  • Shredded corn
  • 1/2 carrot
  • Salt and pepper

Ingredientes:

  • Mixtura de mariscos
  • 250g de langostinos frescos
  • 2 tazas de arroz
  • 1 cucharada de pasta de ají amarrillo
  • 1 cucharada de pasta de ají panca
  • 2 cebollas
  • 1 tomate
  • 1 lata de leche evaporada
  • Maíz desgranado
  • 1/2 zanahoria
  • Sal y pimienta

We will start by creating something important for this recipe which will be a concentrated broth with a seafood flavor, well, prawns. As you saw in the ingredients, we are going to need fresh prawns because we are going to need their skin, we are going to peel and clean them and preserve the skin part and the tail, and with this we are going to make a broth.

In a frying pan we start by placing a splash of oil along with half an onion cut into cubes, we cook until it is transparent and we add 1 chopped tomato, we add the skin of the prawns, we add salt and pepper to taste, we will let this cook until it is everything a little soft.

Empezaremos por crear algo importante para esta receta que será un caldo concentrado con sabor a mariscos, bueno, langostinos. Como vieron en los ingredientes vamos a necesitar langostinos frescos porque vamos a necesitar su piel, los vamos a pelar y limpiar y conservar la parte de la piel y la cola, y con esto vamos a elaborar un caldo.

En una sartén empezamos por colocar un chorrito de aceite junto con media cebolla cortada en cubos, cocinamos hasta que esté transparente e integramos 1 tomate picado, incorporamos la piel de los langostinos, agregamos sal y pimienta al gusto, esto lo dejaremos cocinar hasta que esté todo un poco blando.


Then we take everything to a blender along with a little water that we will add little by little, the result will be a mixture similar to a sauce, we will strain this, leaving us with an orange liquid and this will be our concentrated broth, which we will reserve to use in rice.

Luego llevamos todo a una licuadora junto con un poco de agua que iremos agregando poco a poco, el resultado será una mezcla parecida a una salsa, esto lo vamos a colar dejándonos con un líquido de color naranja y esto será nuestro caldo concentrado, que reservaremos para usar en el arroz.


Now to start making the rice with seafood, we will place the cut onions in a pot with a little oil and let them fry and then add the yellow chili paste and the panca chili paste, mix for about 2 minutes.

Ahora para empezar a elaborar el arroz con mariscos, colocaremos en una olla con un poco de aceite, las cebollas cortadas y dejamos freír para luego incorporar la pasta de ají amarillo y la pasta de ají panca, mezclamos por unos 2 minutos.


Add the can of evaporated milk and we are going to incorporate the seafood mixture and the prawns, we mix and add the rice, the concentrated broth that we had reserved, the carrot cut into small cubes, the shelled corn and you can also add peas (I didn't have any), we add Salt to taste and let it cook.

Añadimos la lata de leche evaporada y vamos a incorporar la mixtura de mariscos y los langostinos, mezclamos y agregamos el arroz, el caldo concentrado que habíamos reservado, la zanahoria cortada en cubos pequeños, el maíz desgranado y también pueden agregar guisantes (yo no tenía), agregamos sal al gusto y dejaremos cocinar.


After approximately 20 minutes the rice will be ready, it is worth mentioning that the consistency of the rice must be creamy which is why the evaporated milk was added.

Después de aproximadamente 20 minutos el arroz estará listo, cabe mencionar que la consistencia del arroz debe ser cremoso por este motivo fue añadida la leche evaporada.


I decided to decorate the dish with prawns on top, a wheat tortilla and other elements.

Decidí decorar el plato con langostinos encima, una tortilla de trigo y otros elementos.
