Coconut is a typical fruit in Vietnam, so in Vietnamese cuisine, coconut can be found in many dishes from savory dishes in daily meals to delicious desserts. Coconut tuiles is one of my favorite snacks made from coconut. The great thing is that this snack is quite easy to make and does not take much time to prepare.
The ingredients used to make this snack include:
- 3 egg whites
- 60-70g sugar
- a pinch of salt
- 40g unsalted butter
- 20g coconut milk
- 40g plain flour
- 100g coconut desiccated
How to mix the batter for the coconut tuiles
First, separate the egg whites, add a pinch of salt and all the sugar in the white egg then beat the mixture until the sugar is completely dissolved.
Add melted butter and coconut milk into the egg white mixture and continue to mix well.
Sift the flour into the mixture and mix until the mixture is smooth.
Add the desiccated coconut and mix well.
How to bake the coconut tuiles
Preheat oven to 150 degrees for about 15 minutes. Spread the batter mixture evenly on baking paper, trying to spread the batter as thin as possible.
Put the cake in the oven for about 15 minutes at a temperature of 150 degrees Celsius, then take the cake out and use a knife to make cuts on the cake, this will help the cake to be broken more easily after baking.
Put the cake back in the oven for another 15 to 20 minutes at 140 degrees Celsius until the cake turns golden brown then remove the cake from the oven and wait for the cake to cool and break the cake into small pieces following the previously cut lines.
The temperature in my oven is uneven so the edges cook faster and get a little bit browned
After letting the coconut tuiles cool completely, you can put it in a box for storage (Unfortunately, I didn't have a chance to store this coconut tuiles because I ate all of it right away). The snack is very crispy with the aroma and taste of coconut, the sweetness is just right (you can adjust the sweetness by increasing or decreasing the amount of sugar).
Hope everyone will try this coconut tuiles recipe and will love it too. Thank you very much for reading my post!
