Very creative method to use the back of the tray! I love squash in every way so I will try this for sure! Also, if you still have some squash remaining, you can try my roasted butternut squash soup, you can find it on my blog!

I don't have any whole squashes left, but I can buy a butternut squash at the grocery store sometime. That variety hasn't done well in my garden, so I quit growing them.
