This exotic tropical evergreen fruit tree usually grow between 15'-20' or more, it's scientific name is Carambola and native to tropical Southeast Asia. Here in The Bahamas we call it 'star fruit', and the most popular consumption method is eating the fruit whole or making juices, minus the seeds for some. Jamaicans call it 'Jimbilin'. It is advised to only eat the star fruit after it is ripe, it's ripe when the waxy skin turns from green to yellow. The skin is edible and the succulent flesh usually has a sweet yet tarty flavor. The fruit can be dried to make a healthy snack, jam, pastries and cakes.
