Good morning, Hive friends! How are you all doing? Today, I've brought a delicious curry to share with you - red amaranth and lentil curry. This dish combines the goodness of fresh greens with protein-rich lentils, making it not just tasty but also nutritious.

This curry is packed with essential nutrients that our bodies need. Red amaranth leaves, for instance, contain vitamins A, C, and K, along with iron, calcium, and antioxidants. Required Ingredients...

🍀 Red amaranth 250g.
🍀 lentils 50g.
🍀 2 1/2 Cup of coconut milk.
🍀 A little chopped onion.
🍀 2 green chilli pods, finely chopped.
🍀 About 3 pieces of cinnamon.
🍀 Curry leaves.
🍀 1/2 teaspoon of turmeric powder.
🍀 1/2 teaspoon of curry powder.
🍀 1/2 teaspoon of mustard powder.
🍀 1/3 teaspoon of Fenugreek seeds.
🍀 Salt to taste.
🍀 1 teaspoons of chili powder.

Method of making....

First, wash and clean the red amaranth leaves and cut them finely.

Then take a cooking pot and add washed lentils and red amaranth leaves to it. Turmeric powder, salt, chili powder, curry powder, mustard powder. Collect all the fenugreek seeds.

Then add chopped onions, curry leaves and cinnamon pieces and mix well. After that add about 1 1/2 cups of coconut milk and mix well.

Then cook it for about 7 minutes. If the lentils are boiled, add the remaining cup of coconut milk and cook for about 5 minutes.
