Give a spark with Lehsun Kachra Ki Chutney(Garlic and wild cucumber chutney)

Have you heard about Rajasthani Kachra Lehsun(garlic) ki Chutney?
Most of the people might be thinking about Kachra. Its a wild cucumber basically found in Rajasthan and Gujrat. IN Rajasthan , marwadis like me are very Found of this Kachra lehsun ki chutney. It is very delicious recipe which we can have it with BAJARE KI ROTI AND SANGRI KI SABJI. Its a traditional food or I can say A Rajasthani cuisine. In Rajasthan, every household make this in monsoon time. Its a seasonal vegetable. Here In bengaluru, suddenly I saw this kachra and thought to buy to make chutney.

Lehsun ki chutney is very popular dish and you will get a spark while eating it in every bite.. It goes well with Paranthas/ Rotis and Bajre ki roti(Pearl MIlet)/ Momos and any snacks or fritters like Pakoras.

To make this chutney
First wash and peel kachra(wild cucumber)

Now chop the kachra into pieces.

Further in a bowl soak some whole red chili in hot water for about 15 mins.

Now heat oil in a pan and add cumin seeds.

Make a paste of soaked red chili and kachras. Further place the paste in the hot oil.

Add salt

Mix well.

Now add water, cover and cook for 15 mins till the oil seperates from the edges.

Stir occasionally to prevent from sticking.

Now we can see the oil seperates. That means it cooked. Just half teaspn smear some sugar and mix it. Its optional.

Transfer the chutney in a bowl and have it with any snacks.
