As I wrote in an earlier blog, I reconnected with a friend from my college days after almost 20 years, and I will stay in Mexico for two months with his family. Thanks, my man~!! I really appreciate for him and his family! What a great memory I had with them.  I will be in Mexico during the Day of the Dead celebration when Mexico takes on a festive atmosphere. My friend's wife owns a large ranch, and her family gathered near the ranch to celebrate the "Day of the Dead" together. If you don't know about Day of the Dead celebrations, I recommend Disney's Coco as a very accessible and entertaining introduction to Mexican culture.  When we arrived at the ranch, my friend's wife's mother started preparing a Mexican dish called cochinita pibil. My friend's wife was building an altar to honor her ancestors to celebrate the "Day of the Dead." She was preparing to offer marigold flowers and welcome the spirits of her ancestors.

Celebration for the Day of the Dead at the ranch my friend and his wife own

My friend's wife's parents own a large ranch, and my friend wants to run a shelter for shelter dogs that he wants to build in the future on this ranch, while helping his aging wife's parents run their ranch. It was a big land with many bananas and other tropical plants. They also planted several kinds of citrus fruits. Imagining that in a few years, the land beside this ranch will be beautifully landscaped, I thought that I would like to come back someday.

There were beds in a hut on the side of the ranch where everyone was supposed to stay after the "Day of the Dead" celebration. I also had the experience of sleeping in a hammock for the first time in my life, in a hammock provided by my friend. Hammocks are very popular in southern Mexico, and sleeping in a hammock at home seems to be very common. My friends insisted on setting up a tent and camping on the property, and we all pitched our tents.

Preparation for underground oven for cochinita pibil

In a hut next to the farm, my friend's wife's mother and her older sister were preparing cochinita pibil while her father was preparing an underground oven in which to cook the cochinita pibil. That's right, we dug a hole in the ground and built an oven there. Not speaking any Spanish at all, I had no idea what his father in law was doing at first. I asked my friend how to cook cochinita pibil, and I thought, "I see," so I gathered stones and wood. First, we made a big hole in the ground. Then we burned a lot of the wood we had collected and put more and more stones into the hole. We burn the stones until they are hot and then spread banana leaves on top of them. Then we place the food, wrap it again with banana leaves on top of it, and then cover it with soil and steam it all night.

I was a little tired from building the basement oven, and when I went to the hut for a beer, everyone was making many of the ingredients for cochinita pibil. They were seasoning the dough made from corn with hot boiled chicken and pumpkin mashed into the filling. The bones were neatly removed from the chicken. Since they were boiling several whole chikens, they also prepared the entrails and other parts of the bird for different dishes. Corn, squash, and beans seem to be very important ingredients in Mexico, and all three are used in many Mexican dishes. They quickly spread the corn dough on the banana peel and added the ingredients to the dough. While cooking, we heard many stories. My friend is very fluent in Spanish, and it is rare to find an American who can speak a second language. I asked the friend to tell me about cochinita pibil to her mother. The mother married the father and moved to Campeche, but in Oaxaca, where the mother is from, they do not eat cochinita pibil, which is a food from the Mayan period. She told me that she learned how to make cochinita pibil from her mother-in-law after marrying into Campeche, where the Mayan culture remains strong.

Through this trip, I really felt that it would have been fun if I could have spoken Spanish. I had several opportunities to study Spanish when I was in college, but I ended up not learning it, and now I wish I had learned to speak it. I made many friends in Mexico, and I hope to study Spanish a little bit more so that I can have a conversation with everyone in Spanish when I go back next time. I am looking forward to my next visit to Mexico.
