Healthy Indian Breakfast - Poha (Spicy Flattened Rice with vegetables)

I was bit busy today as I had to go out to attend an event. I was thinking what to prepare for breakfast which is quick and filling, then I thought let's make Colourful Poha with lots of veggies. Sometimes I like to put different types of colourful vegetables in the dishes I cook to make it healthier. 😊

But before starting with the recipe let me tell you first what is exactly the poha is.

Poha is an Indian dish prepared with flattened rice. Its a much loved breakfast in India as its very light on stomach and easy to make.

So let's get started with preparation.

:: INGREDIENTS ::

  • Poha - 200 Gm
  • Potato - 1
  • Onion - 2 Medium Size
  • Carrot - 1
  • Capsicum - 1
  • Peanuts - 1/2 Cup
  • Curry leaves - Handful
  • Oil - 2 Tablespoon
  • Mustard Seeds - 1/2 Teaspoon
  • Turmeric Powder - 1/2 Teaspoon
  • Chili Powder - 1 Teaspoon
  • Garam Masala - 1/2 Teaspoon
  • Salt - As required
  • Lemon - Half
  • Sugar - 1/2 Teaspoon

:: PREPARATION ::

Wash all the vegetables and cut into small pieces.

Wash Poha (Flattened Rice) properly in running tap water and keep aside. Poha will absorb water and become soft after sometime.

:: RECIPE ::

Heat the pan and put oil in it. Put mustard seeds in the oil for tempering.

Put curry leaves and peanuts and fry until peanuts turns golden and curry leaves turns crispy.

Add chopped onions into it and fry.

Once the onion turns golden, add chopped vegetables into it. Today I used potato, carrot and capsicum but we can use as many colourful vegetables as we want.

Add turmeric powder and little salt in the vegetables and mix.

Cover the vegetables so that it can cook and become soft.

Once the vegetables become soft, add the Poha in the vegetables and mix it well.

Mix it well and add little more salt, sugar and garam masala.

Lastly add half lemon juice.

Our Poha is ready now. You can top it with any mixture snack (optional) and enjoy this filling breakfast.
