Kwek-Kwek: A Battered Egg Recipe

Hello everyone! My greetings to all Hivers out there. It's been a while since my last post. It's been a very busy week due to teachers' training. This time, be with me as I share a new recipe that you will surely love. Let's have fun and learn to prepare a delicious kwek-kwek.

The first thing we need to do is prepare all the ingredients. I was supposed to use quail eggs, but since we have a lot of eggs from our farm, I used them as the main ingredient for this egg dish. I harvested fresh eggs from our small poultry farm and used 30 pieces of them for our recipe. So our ingredients are the following:

Kwek-Kwek Ingredients:

30 pieces of hard-boiled medium eggs
3 cups of all-purpose flour
1 1/2 cups corn starch
4 tsp. annatto powder
1 1/2 tsp. table salt
1 tsp. black pepper
3 cups of water
500 ml of cooking oil

Once we're done with the mise en place, we can start the cooking procedure.

Procedure:

1st step
Boil the eggs for 10 minutes to achieve hard-boiled eggs. Once it's done, peel off the shells and put the eggs in a bowl with some starch for dusting.

2nd step
Mix all the dry ingredients in a bowl. Make a well in the center and pour in 3 cups of water. Stir it well to achieve a smooth texture in the batter.

3rd step
Heat the oil in a deep pan. Or any will do as long as you can deep fry the battered egg.

4th step
Make sure to dust the peeled eggs properly and put them into the batter. Coat it well with the batter to achieve the best outcome.

5th step
Once the oil is hot enough to fry the kwek-kwek, start adding them one by one. In my case, I cooked 10 kwek-kwek at a time. You can see that the color will change and the batter will have a crispy look. Once the kwek-kwek rises from the bottom of the pan, remove it and place it on a plate with a paper towel or in a strainer and a bowl to drain the excess oil.

Repeat the 4th step up to the last until you finish cooking 30 hard-boiled eggs.

To have the best taste of our kwek-kwek, we need to make a sauce. We need the following to prepare it:

Sauce ingredients:

400 ml of vinegar
2 tablespoons cooking oil
1 pc. onion
1 clove of garlic
Pieces of chili (it depends on your likeness)
1/4 kg sugar
1 cup of water
4 tbsp. corn starch

Procedure:

Mince all the spices.

Sauté the spices in a small amount of oil.

Add the vinegar and water and let it simmer.

Add the sugar and stir it well.

5th step
Dissolve the starch in a small amount of water, then pour it into the sauce mixture over low heat.

Transfer the sauce to a clean container.

Once we're done, we can start to savor the delicious kwek-kwek. My wife and kids loved it as a snack, and we even paired it with rice sometimes.
