Made Borlotti bean stew with roasted chicken breast and broccoli for our staff meal tonight.

Borlotti beans are also known as pinto beans and an awesome Chinese dish that most don't know about is a soup that goes well with a bone broth soup.

For this one however I started it off with a mirepoix and Sautéed until fragrant then I added in a tablespoon of minced garlic.

Next I added in spiced of cumin powder and smoked Paprika powder with a couple of sprigs of rosemary then cooked until fragrant. Next the canned Borlotti beans go in and equal amount of water and stew for 10 minutes.

While the stew cooks, I prepped the chicken which is simply salt and pepper on boneless chicken thighs then into a pan it goes to sear and cook. I added rosemary and garlic oil to cook and get those chicken thighs nice and fragrant

For the accompanying vegetables, I simply Sautéed broccoli with garlic oil and seasoned with chicken stock.

Serve everything up together plating however you like and the dish I done and ready to be enjoyed!
