You will need:
For about 4 servings

  • 8 small/medium sized potatoes
  • 150 g. cooked or canned chickpeas
  • half of a red bell pepper
  • 1 onion
  • 3 garlic cloves
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground sweet paprika
  • 0,5 teaspoon of ground turmeric
  • ¼ teaspoon of black pepper
  • 0,5 teaspoon of salt
  • fresh parsley for decoration (optional)
  • sauce of your choice for serving

Preparation
1.Peel and rinse the potatoes and place them in boiling water. Boil for about 15-20 minutes (no need to boil completely). Once cooked, remove from the water and leave to cool.

2.Preheat the oven to 200 Celsius.
3.Chop the onion, garlic and pepper.

4.Heat the oil in a frying pan. Add the onion and garlic and fry for a few minutes until soft.

Then add the chopped pepper and fry for another 3-4 minutes.

Add the chickpeas (washed) and all the spices, stir-fry for 2-3 minutes.

5.When the potatoes have cooled, cut off part of the top and scoop out the pits.

6.Place the chickpea filling in the wells. If it doesn't fit, simply spread it on the baking sheet next to the potatoes and bake together in the oven.

7.Arrange the stuffed potatoes on the baking sheet on the baking paper (with the rest of the filling), you may drizzle or brush some olive oil on them as well.

Bake for about 15-20 minutes or until lightly browned.
8.Serve the potatoes with the sauce of your choice (for example, homemade garlic sauce). It is best to eat them the same day, as the chickpeas will harden slightly over time.
