Honest Greens
I already mentioned that I had a few restaurants or chains on my list to visit while being in Madrid for two days. The Honest Greens chain was one of them, although they didn't seem to be very convenient in terms of our plans travelling through Madrid I still hoped that some way I could end up eating at at least one of the restaurants.
The food on their website looks so good that without joking, I've been looking at their pictures mouthwatering in the week before departure and getting excited to go to Madrid because I felt the trip meant that I was going to eat amazing food during both days.
Nuevos Ministerios metro station
While we were super hungry and didn't want to travel any longer than needed before eating something, I decided to check the first metro station where we'd have to change lines, which was Nuevos Ministerios. I just zoomed in on Maps and instantly noticed that Honest Greens Castellana was just 450 meters away from the metro station. What a relief! I was so excited that I'd at least eat there once and even more so knowing that I'd only have to walk a small 6 minutes to get there.
One straight walk
It was really simple, just one street, but I Had to carry the luggage up the stairs once, this was the only disadvantage of going there. The street was really busy and instantly made me feel overwhelmed as I was already tired and low on energy it felt worse than it normally would if I'd feel great and without any luggage.

We could not find the entrance first, because maps told me it was at the main road side, while in reality you have to walk around the building and then you see the entrance.
Just a few people
We were so lucky that we arrived at the time that we did because it was close to empty. Before entering I checked the menu which was also placed outside on this wooden board, matching their interior perfectly:
We first decided to sit in the front area, just after the first door but we were both quite cold and decided to enter and sit there instead. This was before that moment:
The interior
I really love how this chain has such a nature vibe with everything in their restaurant. Not just the furniture, but also decoration until the plates they serve the food on. They also have this refill system where you can keep refilling your flavoured water when you want.
The kitchen was still closed when we arrived, I didn't even check this before going there because I had my mind set on having lunch there but when I tried ordering in their app (which I'd recommend for your convenience) I found out the kitchen was closed. I had to wait ten minutes only though. While we waited, all these amazing scents were slowly filling the restaurant and I got more hungry by the minute!
Ordering
I had a hard time choosing my lunch though because I was curious about several things. I thought the portions weren't so big so I over-ordered for myself even though the falafel I added as extra for my daughter (as she loves falafel) were not really meant for me but for her. You can see how big these falafel balls were, I expected small ones so this was clearly too much:

I can say it was delicious, I would never prep any bowl like this myself probably but I ate as much as I could including just 1 falafal as I had to try it but then I was way too full because I also had a plate of sweet potatoes:
Very delicious banana bread
When I noticed there was a banana bread option, I thought let's treat her and order that one for her because she also loves banana bread so that was a good compromise to make her eat the falafel as well.
Lastly, the most delicious ever coconut coffee caramel drink I had:

In fact, I loved it so much that I have to see what the ingredients are and try and replicate it at home because I was in awe and if it weren't for the crowds that arrived by then, I'd have ordered another one.

Conclusion
I can only say that this restaurant was such a lovely surprise and everything they served seemed of high quality as well as super fresh. A lot of chains advertise with fresh ingredients but I don't often see it as fresh as they claim on the website or on the menu.
The presentation and serving on natural material made plates and bowls were a huge bonus point because it added to the chain's ambience in the restaurant as well as the overall feel.
Everything was very well in balance which I also find a huge bonus point and reason to go back there if I were to live in the area. The potatoes had a dressing on it which I'd normally not eat probably but it all tasted so great, I almost felt sad for not being able to finish my plate and bowl.
The falafel was huge and I loved it, my daughter had another opinion, she only wanted to eat one as she said mine are better, lol, the sweetheart.. I decided to ask for a little box to take home the two falafel that were left as they would probably come in handy later in the apartment and I hate wasting food in general.
As mentioned above, the coffee was sublime and nothing like I ever tasted before, it was so good, make sure to order it with coconut milk though!
Fast track ordering through the app
This chain, at least this restaurant is highly recommended by me, I give it 5 stars! Just know that it's in a crowded area, it seems to be surrounded by office buildings as well and while it was just open for 20 or 30 minutes, there was no free table left and a long row until outside. They have a fast track option through their app if you want to take advantage of that and have your order faster.
5 Stars from me, and it's been a while since I gave a restaurant 5 stars! So Honest Greens Castellana did great! The staff was also very attentive and friendly, which clearly adds to the user experience.
If I ever come to Madrid again, I will re-visit, but I bet the next Honest Greens experience will be in Barcelona instead...
