So how do you actually set up an account to require a multisig transaction?

That's the caption in the pending update I mentioned.
You can use our multisig dapp for this:
https://multisig.hive-keychain.com/#/login

You can add keys or accounts as authorities. Then make sure the combined weights of the authorities reach the threshold for a transaction to be broadcasted.
