A simple Pesto, Asparagus & Tomato Risotto recipe for dinner
A refreshing dinner is all we need at the end of the day. I am practicing mindfulness in cooking and eating. I have added this recipe in my plant based food list finally. You make your own pesto by blending cashew, spinach, nutritional yeast, water and salt. Brown rice is fried with onion, garlic (no oil) on the pot and then slowly cooked till boiled for about one and half hour. Then you add your pesto to the rice and slow cook for another 15 minutes. You can steam asparagus, dice tomatoes and serve with it. I walk you through the entire process in this recipe video. Hope you can make it an enjoy eating this delicious food. Let's eat mindfully and enjoy.
