So after yesterday's olive bread attempt, I decided to make more olive bread but this time with 00 flour and not my “self-raising flour adaptation” (which was still amazing) I wanted it to be more authentic and use the 00 flour today and also used red kalamata olives, to me they smell so much better than green ones, but the green ones sometimes have that sweet/spicy peppery tang to them.
These red olives were extra soft today!
This today's dough just finished it's first knead and off for a prove for 2.5 hours.

Today's post is actually about my special humous-making skills 🙏 where over the years of being veggie, vegan, and pescatarian I have learned to adapt and invent ways to suffice missing ingredients with sometimes equal, or better ingredients. And this one is really a nice and easy, more affordable, and definitely adds a little more protein than some of the tahinis that can be expensive for good quality.
This recipe simply uses Peanut Butter instead of tahini. Another great option is unsalted and unsweetened Almond Butter.
What you will need for 3-4 huge servings:

*Good quality olive oil, (organic extra virgin olive is best) sesame oil is good but must be mixed with olive oil at about (25/75 Ses/Oli) for best results.
*1 whole lemon zested and juiced.



*Press and push the remaining flesh into the catcher and pour the seived lemon juice into the bowl with the zested lemon peel.

*Make sure you chuck some pulp into the mix for extra lemony-ness!! 😋

*Keep the lemon skins to clean your hob if it’s a little messy!

*3 Large cloves of garlic peeled and grated


*Add the grated garlic to the lemon mix.


*Add lashings of olive oil, twice as much as the lemon and garlic mix


*2 heaped tablespoons of peanut butter

*Mix them all together until smooth

*Wash the chickpeas in cold water, Add then to the mix and then blend for 3mins or until smooth as possible (leave coarse if you like the texture more than smooth)

*Add more olive oil (if desired)



*The leftovers on the blender head is your taster!
