Let's cook kutsinta

Cooking is a talent and skills acquired by many. Many can cook a variety of recipes at a time and others can cook a single recipe only but as a whole cooking is fun.

Honestly, I am not good in cooking especially viand but atleast I have learned to cook other food.

When I gave birth to my son last 2017, I decided to resign from work. From earning every two week to nothing, from busy to work to staying at home, it really made me adjust. There were times that I felt so bored and felt that I am inactive. I think of something to learn.

Kutsinta is a steamed cake usually made with flour, sugar and lye water. It is one among the popular snack in the Philippines. It is one of my favorite and I wanted to learn how to cook it. I tried to search on YouTube and followed everything but it turned out imperfect as it taste bitter. Fortunately one of my workmate before is cooking kutsinta and I am so lucky and happy when she offered to gave me her ingredients and teach me the basic of cooking it. It was not just one, twice or thrice attempt but many times before I perfectly get the texture I want.

I also experienced that my steamer and some of my molder got burned because the water in the steamer got empty. There were lots of unforgettable experience while learning to cook kutsinta.

Today, I will share to you the ingredients I used and the procedure how to cook kutsinta. Without further ado, let's go.

INGREDIENTS:

6 cups 3rd class flour
1 kg brown sugar (preferably dark brown)
7 pieces egg
2 tablespoon vanilla (not in the picture)
4 tablespoon lye water (not in the picture)
10 cups water
Cheese or grated coconut for toppings

Note: These ingredients will yield approximately 100 pieces kutsinta.

PROCEDURE:

Mix the dry ingredients first. Put the 3rd class flour in a dry bowl followed by the brown sugar. Mix them well.

Mix the wet ingredients in another bowl. Put the water, vanilla and lye water. Mix them well.

After mixing both dry and wet ingredients, add the wet ingredients in the dry ingredients and mix them well until no lumps can be seen.

Lastly, add the eggs (this time I just use 7 eggs for 100 pieces kutsinta instead of 8 originally). Eggs is not so common in any other kutsinta recipes and made this kutsinta special. Eggs will bring different texture and taste in your kutsinta.

Many were asking if I am using annatto powder as food coloring and my answer is no. The color of my kutsinta will vary depending on the color of the sugar I used. I usually use dark brown sugar for a better results. But sometimes it is not available in the market so I will buy according to availability.

Now, the mixture is ready and can be put in the molder.

Put the molder first in the steamer before puting the kutsinta mixture. I used medium sized molder as this is the usual size for kutsinta. But if you want a bigger one, you can use large sized molder.

I put a little oil in the molder using some cloth to help us remove the kutsinta from the molder easily.

Preheat water in the steamer first so it would be easy to steam them.

When everything is done and when the water is already boiling, add the steamer and cook for about 25-30 minutes.

Then, your kutsinta is now good. Remove the kutsinta in the molder and transfer in the container you want.

Serve it with cheese or grated coconut as toppings.

It seems so easy for me to mix and cook kutsinta but I felt so tired washing the small molders, lol.

Imagine you will wash them one by one and they were so small, lol. But it is part of the process that we really need to wash them.


Learning is a continuous process as learning in cooking is a process too that we need to practice and practice until we got it perfect.

This is my first sharing this recipe as I am using this recipe in a small business back then as one of my side hustles. After experimenting many times and felt it was now perfect, I then started accepting orders.

Ano yung class flour? Yun tlga name? Kala ko tapioca flour to..

Third class flour sis. Dito kasi there is first class and third class flour. When we go to market, sabihin lang namin 3rd class flour. Yun Yung Pinaka basic na flour na ginagamit ko din sa mga vegetable patties ko.
